Pumpkin Puree


I still had all those cute little white pumpkins
from my Thanksgiving decor.  I put one out for the
squirrels but they weren't interested!  So I roasted 
and pureed them today.  I think I'll make some pumpkin
bread tomorrow and the rest will go in the freezer!
Isn't it pretty?  It's lighter in color than orange pumpkins
and the taste is milder.  I halved the pumpkins, removed the
seeds and roasted them at 350 for 90 minutes.
I used my food processor to puree it all when it had cooled,
adding a little water to smooth it out to the right consistency.

    1. Hope it works well for you! I was happy I didn't just pitch them and they were still firm enough to use.
      The house smelled good while they were baking, even without any spice on them...just a little spray oil in the pan.

    1. The canned pumpkin is great and so cheap that it's really more of a fun project than a
      necessity. At least it turned out great for all of my efforts. haha.

  4. I think that will be the best pumpkin bread ever.
    Milder flavor is just perfect for me.
    The squirrels don't know what they are missing!

  5. Hi Betsy - I'd happily eat a plate of that with some butter, salt and pepper ... delicious. I love parsnip and carrot mash ... just so moreish ... well done on using them up - poor squirrels missing out ... they might like the roasted skin? Cheers Hilary

  6. I didn't think they would last this long. Great that they did. Pretty purée colour and I love that bowl. I don't think I have ever tasted pumpkin bread!

    1. Usually those gourd type veggies last the winter. I've been hungry for acorn squash lately and need to pick up a few of those. Isn't the bowl sweet? 1800's....auction find, of course.
      Pumpkin bread must be an American thing. We do love our fall pumpkins and make all kinds of things out of them.

      We had gray drizzle all day, then the sun popped out for about 20 minutes and is gone again. ha.
