The Weekend
















  1. Daffy Down Dilly has come to town....
  2. Four of my five men in church this morning.
  3. Alex looks like he's praying for it to be over. ha.
  4. I took this pic of Cocoa on Ash Wednesday.  With that feather centered perfectly on his forehead, I asked him if he had converted to Catholicism. ha.  Well, if he did, I'm sure he's happy today is Easter and he can return to catching mice or whatever it is he gave up for Lent. :)
  5. Easter Ham.  I love to cut through the top and add a glaze before baking.  
  6. This year I mixed up a combination of mustard with horseradish, raspberry jam and brown sugar.  It was delicious!
  7. I hadn't seen Peaches in a week.  The last time he couldn't eat solid food as if something was hurting inside his mouth.  I told The Mister after 6 days that I think he went off somewhere to die...he just looked so bad.
  8. The next day, The Mister called to me, "Hey, Peachy is out here!" He still had trouble eating but I was prepared with bottled kitten milk and canned pate style cat food mixed with a little water, which he managed to eat just fine.  I have the carrier out on the back porch and hope to catch this little stray before too much longer so he can get some medical care.  He came two days in a row but I haven't seen him since Friday night now.
  9. Mr. Grackle.  Love these shiny, bright-eyed birds!  They are such good parents, too.
  10. Asparagus baked with bacon and topped with parmesan and panko.
  11. Mr. Moon.
  12. Key Lime Bars.  An Ina Garten boxed mix.  Tasted like scratch...but you did add your own butter, eggs and lime juice.
  13. This little Tufted Titmouse has been my delight today.  Aw. What a cutie!  I love how her little grey gloves match her Easter coat and hat. ha.

Beef and Cheddar Spirals


Cute little sandwich bites.  Great for an appetizer or snack.


I paired them with a salad and fruit for a light, summer meal.


Beef and Cheddar Spirals

1 can crescent dinner rolls
4 thin slices of roast beef
4 t Dijon mustard
1 c shredded cheddar cheese
1 T sesame seeds

Unroll dough into 4 long rectangles.  Press seams to seal.
Layer with mustard, beef and cheese.  Start with the short side
and roll so you have 4 rolls.  Press seams closed and slice each roll
into 4 spirals, creating 16 little sandwiches.  Put on parchment-lined
cookie sheet and sprinkle with sesame seeds.
Bake 15-20 minutes at 375 until golden.
Can refrigerate 2 hours before baking.

These are also good using ham and Swiss, too!

I double the meat to make them a bit heartier, but
for an appetizer I would leave as is.

One funny thing...I never buy crescent rolls in a can!  I've made these twice in the last month, and both times I couldn't get the can open! LOL!  I had trouble peeling off the paper, kind of holding it away from me in fear that the can would pop open and scare me.  Then when I got the paper off, I couldn't get it to pop open!  I'm glad I was alone in the kitchen as I'm sure it was a comical sight. :)  Geesh!

Angel Hair Pasta Primavera

A really yummy one dish meal. :)
Pasta Primavera
1/4 c olive oil
1/2 medium onion, diced
1 c sliced zucchini
1 c sliced mushrooms
1 c pea pods (I used sugar snap)
1 clove garlic, minced
1 tomato, diced
1 c ham, cubed
1 1/2 t salt
2 t Italian seasoning
1/4 t ground black pepper
1/4 c grated parmesan
8 oz angel hair pasta, cooked al dente

In 12 " skillet over medium heat, saute onions.
When translucent, add remaining veggies, meat
and seasonings. Saute 3-4 minutes until
veggies are tender but crisp. Add pasta
and cheese. Heat through and serve.

Ham and Cauliflower Pot Pie

Sauce
1.5 sticks butter
1 8 oz pkg cream cheese
8 oz Velveeta
1/2 c parmesan cheese
1 t sugar
1 clove garlic, crushed
1/2 t onion powder
1/4 t pepper
1/2 t dried dill
1-2 c half and half
Whisk all in sauce pan until smooth over medium heat.
Add more half and half if needed to make the sauce
the proper consistency.
Pour over 3 c cubed ham
and 1 head of cauliflower, cut in 1 " cubes and parboiled.
Bake in greased casserole dish, topped with Martha Stewart's
pate brisee for one crust. Bake 350 for 45 minutes.
