What I Did Wednesday #29 WITH A LATE UPDATE!



  1. Watered the flowers in the pots outside.
  2. Made out the grocery list. (Spencer came up later and added 'DVDs' to the last column, using my pen.  :)
  3. Watched Mr. Cardinal in the feeder.
  4. Checked the garden for anything ready to pick.
  5. Filled a bag and a box of unwanted items for the thrift store.
  6. Enjoyed the morning light on my desk.
  7. Watched the light turn to dark clouds, lightning, and eventually rain.  Much needed but only about 15 minutes worth.  We need days of it!
  8. Added some cheery stickers to my freshly painted toes.
  9. Watched rain drops dancing in the pool.
  10. You know my yummy Banana Toffee Crunch Muffins?  I mixed up the batter and put it in a greased tube pan.  Baked for 1 hour.  Yum. Easier than muffins, too.  I think I'll be making it this way from now on!
  11. Caught Oreo in the cupboards.
  12. Watered the inside plants.



I also cleaned Nugget's cage and the parakeets' cage,
did 4 loads of laundry, cleaned the bathrooms,
vacuumed, cleaned the litter box and ran on the treadmill.
Oh, and made dinner and did the dishes.
But some things aren't as fun to photograph. haha.

And!!!! We interrupt this Wednesday to show you what some one in town
 dropped off to me this evening.  A frightened, starved little boy kitten they
found wandering around.  I guess they thought Mrs. Doolittle would take him in at the zoo. ha ha. 
 Well, she was right.  How could I refuse?
I even had a little bag of kitten chow.  How convenient!
He's exhausted, can't you tell?  Aww.
No name yet.  Hmmm....

Glazed Apple Cake

Glazed Apple Cake
1 1/2 cups vegetable oil
2 eggs
2 cups sugar
Mix the above ingredients together in mixer.
Add:
3 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
Blend well. It will be a very stiff batter.
Next stir in:
3 cups chopped tart peeled apples
Mix well.
Bake @ 350F in a greased bundt pan
for 1 hour and 15 minutes ~ toothpick test.
Remove from pan when cooled.
Drizzle with powdered sugar, milk, vanilla
and a 1/2 t soft butter whisked together.

Sour Cream Coffee Cake

I baked this coffee cake and took it in to The Mister and
his coworkers today. The plate came home empty!
I did sneak a small sliver just to make sure it was good!
Very yummy and moist!
Sour Cream Coffee Cake
slightly altered from Ina Garten
~~~~
1 1/2 sticks soft butter
1 1/2 c sugar
4 eggs
1 1/2 t vanilla extract
1 1/4 c sour cream
2 1/4 c flour
2 t baking powder
1/2 t baking soda
1/2 t salt

The Streusel
1/2 c brown sugar
3/4 c flour
2 t cinnamon
1/4 t salt
6 T cold butter
1 c chopped pecans

The Glaze
1/2 c powdered sugar
2 T milk
1 t soft butter
1 t vanilla
Directions

Cream wet ingredients in mixer.
Sift dry in separate bowl and add on low
just until mixed.
Combine streusel ingredients in small bowl.
Layer half the batter, then 2/3 the streusel,
then the rest of the batter in a greased tube pan
Sprinkle remaining streusel on top.
Bake 350 for 50-60 minutes.
Toothpick test.
After cooled and removed from pan
drizzle with glaze.

Blueberry Coffee Cake

3 c bisquick baking mix
1 c milk
1/4 c sugar
1/4 c oil
3 eggs
2 t vanilla

Whisk all above until blended.
Spread in greased 9x13.
Top batter with 4 c blueberries.
Drizzle with 5 T melted butter.

1 c sugar
1/2 c brown sugar
1 t cinnamon
1 c chopped pecans
~~~~
Stir topping together and sprinkle
over the blueberries
~~~~
Bake 30-35 minutes ~ toothpick test.
