Pan Fried Catfish

As promised...here's that yummy catfish recipe....
Marinade: spices (onion powder, salt, pepper, steak seasoning, paprika)
combined to equal 1 Tablespoon in total,
1/4 c lemon juice, 1 Tablespoon minced garlic, 1 T parsley.
Breading: 3/4 c yellow cornmeal, 1/2 c Panko bread crumbs (do not substitute),
1/4 c flour,1 t salt.
Set up assembly line of 4 pie plates: 1. marinade 2. plain flour 3. beaten egg 4. breading
Marinade fish for 10 minutes...5 minutes each side. Take fillets through assembly line.
Can rest on cookie sheet until ready to fry at this point.

Heat 1 c plain oil in skillet over med. high heat.
Fry 3-4 minutes per side. Drain on paper towel. Serve immediately.

Seafood Pasta Salad

16 oz pasta, cooked and cooled
1 large bunch fresh broccoli, chopped
1 pkg cherry tomatoes, halved
16 oz. bottle Italian dressing
2 T mayo
1/4 c sugar
1/4 c vegetable oil
1/4 c lemon juice
2 T poppy seeds
2 lb shrimp, cooked
1/2 lb crab meat
(white fish imitation or lump)

Whisk dressing ingredients and pour over
pasta. shrimp and crab meat.
Mix all and chill 4-6 hours for flavors to blend.
Willow and I had this at a beautiful little restaurant
20 years ago this summer. We just loved it and
between the two of us, decided that we could
probably figure out the recipe.
After a little trial and error, this is it!
It's been a favorite of our family ever since.
