Monday, Fun Day


I spent the day in the kitchen today.
I decided the dirt, dust and mountain of laundry from
the weekend would just have to wait another day.
Housework is nice like that...and it waits for you..
and waits, and waits.  haha. Over-ripe bananas,
zucchini and peaches needed to be put to good use!
I made Lemon Zucchini muffins to put in the freezer...






A peach crisp for tonight's dessert....






Italian Zucchini and Tomato Bake for the freezer...
Tomatoes, onions, zucchini sprinkled with Italian seasoning,
garlic, salt, parmesan and pepper.  I layered the whole thing
with slices of romano cheese before putting it in the oven.
I only baked it half way, then let it cool before freezing.





And two loaves of banana toffee bread.

It's banana bread with pecans and toffee chips stirred in the batter
and sprinkled on top.  Heaven.  This is going in the freezer, too!






The muffins have been tested and baker approved. :)

  1. Oh my Betsy..that all looks so very good. I canned peaches, made peach jam and an upside down peach cake. But no supper in sight yet:)

    1. Well, I got lucky today....don't have to make dinner because the mister has
      a business dinner this evening. Maybe you can find some leftovers in the fridge. :)

  2. I only wish I lived in your road, then I could call round when the smell of baking drifted down to my house and I could call to see you and check on the quality of the goodies!

    I spent the day experimenting with smoothies. My favorite now is banana, strawberry and cacao powder using coconut milk. Yum!

  6. Good girl! And, how wonderful will that veggie bake taste when the weather turns cold...
    I need to get some peaches...saw a sour cream peach pie recipe on FB...only a bottom crust!
    Perhaps some jam too...your crisp looks delish!
    You are not still hot there? We are stifling here! Never ending....and no rain!
    Enjoy your evening....I am a bachelorette for a few days...think I'll have some ice cream and sauce! Hahaha!

    1. I was thinking that about the summer veggies...will taste so yummy in the dead of winter!
      I'm going to buy some foil 8x8 pans at the grocery and put a few more in the freezer this month.
      I know I'll be glad to have them in there ready to pop in the oven on busy days!
      That peach pie sounds yummy! I've never had that kind before!
      I love being a bachelorette for a few days! haha....you can have ice cream for dinner and you have control of the tv remote! haha! Enjoy!

  7. It all looks super delicious. I was amused that you did not put a date or a comment on the Lemon Z Muffins . . . no need, I expect they will last about 10 minutes ~ YUM. a;ong with everything else. What a lucky household . . . :)

  8. Don't you just love it, when you have enough to freeze for later? Yummm! Your banana toffee bread sounds delish! Well gosh, now I'm hungry. I have a couple of peaches in the kitchen...going to see what I can do with them.

  12. A very productive, delicious day! A tip on freezing things...if you put plastic wrap or parchment paper in your pans first, then either cook the item or just freeze it, then take the item out of your pan and put it in a ziplock bag and put that back in your freezer, you won't have to have as many pans or casserole dishes. Then when you need to cook the item, pop it out of the freezer and put it back in your casserole pan and bake. Did I explain that right?

  14. Wow, sounds like a cooking day for a lot of folk. Yours all sound so yummy though. I made a batch of milk chocolate brownies and a big pot of American Chop Suey for my grandsons to tackle when they get hungry. I try to always have things in the fridge they can grab and reheat for a quick meal. I think half of the brownies are already gone. Oh boy!
