What's For Dinner?

Here's what we've been having for dinner lately....










  1. Steak and spinach salad.
  2. Grilled salmon with fresh dill.
  3. Breaded chicken tenderloins with sauteed garden veggies.
  4. Salad topped with rotisserie chicken and Chinese rice noodles.
  5. Scrambled eggs with fried potatoes, peppers and tomatoes.
  6. Grilled pastrami and provolone sandwiches.
Yum.

    mmm the pastrami sandwiches sound delicious as well.

    there were def points where i was even out of my comfort zone, but it was kinda like throwing yourself in the deep end - there was no escape. i told god going into it that i would do anything, meet anyone that was put in front of me. so i did.

    1. The pastrami sandwiches have been made a lot here recently. We love them! Add some romaine and thousand island dressing at the end and they are so good!

      You got thrown in the deep end and survived to tell about it! ha. I'm sure you will never know the extent to which your visit touched lives...well, at least not in this life. I'm enjoying your posts about it. How thick was that journal you wrote while there? :)

  2. Oh my goodness, I have missed your dinners. I'm starving right now and would gobble up any one of them. But, I think the grilled salmon would be my favorite.

    1. I haven't posted my dinners in a while! I have been photographing them though...I think they always end of on IG instead! Salmon is my favorite. We have it every week. Yum. So easy and good!

  6. Hi Betsy - they all look so good - I'd love to try the pastrami sandwich sometime ... but I too love salmon and seem to eat it often. The range is good - different varieties of veggie - all good to cook and taste - cheers Hilary

  9. You are quite the cook Betsy...Now that it is just the two of us, I do not cook as much as I used to. And we need to watch the waistlines so that means no desserts which is my favorite thing to make. Actually I am more of a baker than a cook.

  12. Good looking summer food. Perfect for summer eats. It has been so hot here I am getting good at cooking most anything on the grill. I can't remember the last time it didn't hit 100. I am thankful for AC. You all stay cool!
