Homemade Gluten Free Granola


I took my favorite homemade granola
and made it gluten free.
It turned out great, so I thought I'd share!

Gluten Free Granola

4 cups gluten free oats
1 cup chopped pecans
1 cup brown sugar
1 cup Rice Chex, lightly crushed
1 teaspoon cinnamon
1 teaspoon salt

Mix all the above in a large bowl.  Set aside.

1 cup apple juice concentrate, undiluted
1/2 cup honey
4 tablespoons coconut oil
1 tablespoon vanilla extract

Put above ingredients into a 2 cup glass measuring cup.
Heat in microwave 2 minutes until oil is melted and honey is soft.
Whisk together and pour over the granola mixture.
Stir well and spread in a large greased jelly roll pan.

Bake 350 for 1 hour, stirring every 15 minutes.

When cool, add 1 cup each of your favorite dried fruits.
I used pineapple, apricot, papaya, cherries and coconut.

Yum.

  1. Very cool and sounds so yummy. Our family is gluten free for years now. Not by choice though but it saved my husband's life to stop eating gluten.

    1. A couple of my boys are gluten free and I play around with it casually. haha. I do feel better if I stay away from it, though. This granola is addicting!

  8. I thought that I would like to have a go at making that. I went through your ingredients list and realised that some of them are unobtainable through normal channels here, i.e. supermarkets etc.

    Rice Chex, dunno what that is, gluten free oats (surely that is a contradiction in terms?) and papaya I couldn't find any on the online shopping lists.

    Left over Sauerkraut for me tonight!

    1. Sounds like you better pass on this recipe,....you aren't gluten free anyway!
      If you want to make the original recipe, it's on my blog somewhere.

      The papaya was optional.
