Sunny Side Up Over Sauteed Vegetables


This simple little dish has been a favorite here lately!
We've had it for Sunday brunch a couple of times and then once
for a week night supper!

Lots of sauteed veggies with chopped garlic, salt and olive oil.
I microwave the little potatoes a few minutes just to speed them
along, then add them to the skillet, too.  Tomatoes and spinach 
go in at the last minute since they just need to wilt and heat through.
The whole thing only takes about 15 minutes.

Then in a small skillet I fry the eggs and stick them under the broiler
to cook the top and make them sunny side up.

Yum!  And healthy, too!

      so I'm pretty excited about that. haha.
      I guess it doesn't take much to excite me...lol.

    2. They are very excited but there are boxes all over the new place ~ it will take them weeks to sort it all out . . . :)
      They have been in the new house for just over a week and little Peter has settled very well into his new much bigger bedroom. It is such a delight to see them more comfortable and the previous flat was very damp and they always seemed to have nasty colds . . . much healthier where they are . . . :)

    4. Just up the road ~ they can see my next door neighbour's house from their bedroom window . . . :)
      And the swings and park are just up the road from them . . . just wish the rent was not as expensive for them . . :)

  8. I love eggs cooked any and all ways, and vegetables of all kinds. So this dish is a winner to me. It's so pretty, too.

  9. It looks so good! I never thought of finishing eggs under the broiler. What a great idea!

    1. I don't know why I hadn't thought of that before! I've watched chef's on tv
      make them and they just spoon the hot butter in the skillet up over the eggs...
      but I use a nonstick pan and very little butter, so that just wouldn't work!
      This worked great and literally only took a minute! And...I think they
      are so pretty!

  10. Betsy, this looks so yummy even if I can't enjoy it as I'm at home with hight temperature and nausea...so just seeing food makes me crazy ahahahah
