What's For Dinner

Here's what I've been creating in the kitchen lately....







  1. Saute Kielbasa, onions, and bell peppers, then add garlic and Half-and-Half and Parmesan to make a little sauce.  Toss in al dente pasta and spinach.  Taste and season.
  2. Rotisserie chicken, baked beans and green salad.
  3. Scrambled eggs, bacon, broiled tomatoes and a danish.
  4. Grilled Ahi tuna steaks, spinach salad.
  5. Quesadilla soup.  Make broth from a jar of salsa, chicken stock, Velveeta, chili powder and cumin.  Add cans of corn, carrots and black beans.  After spooning into bowls, top with sour cream, shredded cheese, avocado, tortilla chips. cilantro and Sriracha. 
  6. Homemade buttermilk pancakes and syrup.

  4. You missed your calling Betsy. You would make a fabulous food stylist. Those pancakes are killing me. I'll have to make do with the slice of pumpkin cheesecake I brought home from Cheesecake Factory. ;-) Lynne in NC

    1. Make Do????? hahaha....oh YUM! Love that place...I've never had a meal I didn't enjoy and the desserts are to die for. I love to look in the big display case at all of those gorgeous cakes. Lucky you!

  5. What have you done to your tomatoes? Is that grated cheese? Looks good. Why have we never thought of that.

    1. Those are Roma tomatoes. I cut them in half, drizzled with olive oil and sprinkled with salt, garlic powder, Italian seasoning and grated Parmesan. Stick under the broiler until warm and bubbling. Yum.

    2. I would normally sprinkle them with salt & pepper and a little Italian seasoning and olive oil and leave them for at least half an hour and then fry in a little butter. Also yum. But the grated cheese does look tasty. BTW we have just tried M&S Winter Berry & Prosecco crisps (new for Christmas!) and I'll be posting my review in the next day or so. Seriously weird.

    3. That would work....and then after frying, sprinkle on the cheese and it would melt before serving. Yum.

      Now...those crisps....VERY interesting. haha...

    I have one tucked away in the freezer!
    Will be full of Turkey on Sunday!

  7. Oooo - yummmmmm! #1 and #5 are my faves today. Have had nothing but soup and toast for a week but I can't wait to eat again. Hope I can for Thanksgiving... though I will have to be careful.
