Here's what we've had for dinner lately...
- Spinach salad with grilled chicken and Strawberry Balsamic Vinaigrette.
- A Chicken Florentine inspired dish served on spaghetti squash.
- Grilled Salmon.
- Garlicky chicken and mushrooms on rice.
- Grilled burgers with a side of red potatoes and fresh green beans tossed in sauteed bacon.
No recipes...just inspired by looking in the fridge.
Except the strawberry dressing, which is on yesterday's post.
It was yummy, btw! Tonight we're trying it as a chicken marinade.
If I sit down as soon as I plate up the food, The Mister has started
to say, "Don't you want to take a picture before we start?" ha.

Gosh . . . what a lot of healthy food . . . no wonder you all look so young . . . (except The Mister of course . . . .rofl) . . . : I jest of course :)

DeleteWe here in the Mother Country are given the impression by the media the you folks in the Colonies tend to live on McDonalds food and pizza takeaways, and don't eat a healthy diet, and they usual accompany these articles with pictures and/or videos of obese people! Why they do this is beyond me, because when I see those lovely meals you create out of virtually thin air, and your bulging fridge, I know this is not true (well, in Cedarville certainly!)

Well, that is true for a great portion of our country....many obese people...I forget the statistic but it's over half I am sure.

ps...I marinated chicken in that strawberry salad dressing I made yesterday...it was the juiciest chicken we've ever eaten.

The UK is only very slightly behind the US in terms of obesity and when I lived there off and on over the last few decades everything was battered and/or fried. One was hard-pressed to find a salad or fresh veggies on a restaurant menu. Canada has its issues too... I need to cook at home more often!
DeleteIt's much easier to find healthy things on menus these days, isn't it? But when I go out to eat, I think of it as indulging and usually get something I don't make myself....or seldom do...what's the fun of counting calories when you're in a restaurant? ha. I'd rather do that at home and just enjoy myself while out.
DeleteExactly. I tended to eat out a fair amount when my lifestyle was far more chaotic, but not as much now. I try to be conscious of the fact that I don't need an appetizer, main course and dessert with every meal I have! But you guys eat out far more infrequently and yes, who wants to be counting calories when you're enjoying time out of the kitchen. Guess what I found in Toronto a few days ago? A Five Guys Burgers and Fries! I didn't know we had it here. I will have to try them at some point.

DeleteYour food pics make me drool. These all look so yummy AND healthy. Smiling at the Mister mentioning the pics. I can just see your cats getting in on the act thinking, "Sure you don't want to take a picture of me being cute before I run and hide?" :-) They must be very used to the camera!

We love salads, too....so versatile! You could have one every night and not repeat the flavors. Yum.
