Spaghetti Squash With Grilled Chicken And Peas

A few weeks ago I shared with you a serendipity kind 
of recipe where I made dinner with a spaghetti squash
and added what was in the fridge ~ pork tenderloin,
zucchini and mushrooms.

It's my favorite kind of meal, ready in about 15 minutes!
And the combination possibilities are endless.

Over the weekend I made another one.
While the squash cooked in the microwave, I put together
grilled chicken strips, frozen peas, and sauteed vidalia
onions in olive oil.  Add garlic, salt, pepper and stir all together.
Top with chunks of Parmigiano Reggiano.
Yum!



Leftovers are great, too, but we don't usually have any. ha.

    1. It doesn't have a squash taste. It's hard to describe. It's wonderful for being the base that you add flavor to. I have it in the garden. We love it.
      You must try it! Yum!

    2. I do love regular squash too - just keep forgetting about this one. And not sure how to tackle it either! Although it's supposed to be dead easy! :-)

    3. Just cut it in half, scoop out the seeds and microwave it about 12 minutes. Then the flesh shreds out easily with a fork! While it's cooking, I saute the veggies and then add the squash to the skillet. yum!

    1. I know a lot of people don't try it because the name puts them off. It doesn't taste like squash and it doesn't taste like pasta!

  5. I must buy a spaghetti squash the next time I'm at the market. Both dishes you've shared look so good. Sometime I put a whole spaghetti squash in the medium sized crock pot and let it cook slow until its tender, then add what ever..but I like the quick micro version too.

    1. That's a great idea...and I'm sure in the winter if you wanted to warm the house, it could go in the oven! I love this because you can make it all kinds of ways...whatever you have on hand.

  7. We love spaghetti squash so will totally have to try it (both of them). TFS!!! Our garden is the crappiest this year. Hoping to get a nice fall crop.

    Pick off the strip stuff if there for a treat
    Garlic is fine too
    But just suck it back raw at my zoo
    Nastiest thing ever
    But works in its endeavor.

    1. You should take it whole and pretend it's a pill.
      Wash it down and you won't taste nill.
      Well, until you burb, that is.

  11. Great idea- this looks delicious! I've never actually cooked spaghetti squash before- how long do you cook it? Do you slit it first?

    1. They take about 12 minutes in the microwave. Cut it in half, pull out the seeds and put it on a plate...pop it in the microwave.
      Then shred the flesh out with a fork.

    Last night I tried Avocado Gazpacho" at a picnic for the very first time and it was wonderful! Think I'll be making some of that myself one of these days. Maybe after I get that fridge cleaned out. How does it fill up so fast anyhow?

  15. Hi Betsy - love spaghetti squash .. I took some seeds back with my in the 70s and we had one or two squash I think ... I loved them then and eat a lot of squash ... this sounds delicious .. cheers Hilary
