Serendipity Cooking



It's my favorite kind of cooking...
Look in the refrigerator and see what needs using up!

Monday night I put a spaghetti squash in the microwave.
While that cooked, I grilled a pork tenderloin
and threw zucchini, onion, mushrooms and garlic
in a skillet with olive oil.
Then everything came together and was sprinkled
with shredded Parmesan, salt and pepper.

The Mister said to remember how I made it, because
he wants it again!  And I do, too!

    1. I've never made it with spaghetti sauce on it like a lot of people do. That doesn't appeal to me.
      I just serve it like a vegetable. It's really yummy with butter and parmasean on it!

  7. I know it tasted wonderful, but it looks like something in a cook book. What a nice combination...and the refrig cleaned out. Double good! I'm happy to be back in my kitchen.

    2. You obviously do a better job of documenting when you make up recipes than I do--I start adding a pinch of this and a dash of that but don't bother to write it down.

    3. Well, there weren't a lot of pinches or lots of ingredients in this one, so I didn't write anything down. The only thing not seen in the photo is garlic, salt and pepper. If it had been a taste/add, taste/add kind of dish, that would be harder! haha.

  13. nice...way to get creative...we have come up with some pretty good stuff doing that...the bad part is you cant replicate it because you may never have the same leftovers again...ha

  15. It is great when you make something from what you have to hand isn't it. Yesterday I made all from the freezer chilli - meat, vegetables, chilli and garlic and then add a tin of beans and box of tomatoes and voila! Glad that your husband liked it so much that he wants it again! xx
