Blueberry Buttermilk Pancakes

I started thinking about these while I was sitting in church this morning. 
They sounded SO good and I went through a list in my mind..
Buttermilk? Check.  Fresh blueberries?  Check.
Brown sugar for homemade syrup?  Check.
So the dream became a reality for brunch today.
yum.



Blueberry Buttermilk Pancakes

2 c flour
2 t baking powder
1 t baking soda
1/4 c and 1 T sugar
1/2 t salt
2 eggs
2 c buttermilk
1/2 stick butter, melted
1 t vanilla 
fresh blueberries

Makes 16 pancakes.

  6. Yumm! I love that your "thinking" in church became a "reality" for lunch. I laugh, as my dearest had the chance to preach this morning since our pastor is out of town. Don's title "THINK".....how are thinking affects our actions. HaHa..You are proof perfect.

    1. haha...so true! And all the more reason to think positive thoughts if those thoughts ultimately turn to actions. Wow...that is so true...even with negative thoughts. Now I'm wishing I heard that sermon....haha. :)

  8. I love making pancakes and waffles and gooey butter coffee cakes on Sunday mornings ... Almost two feet of snow waylaid our departure this morning. We can't depart Redmond (our airport) until Tuesday morning! Kind of bummed to miss two days .. It took four hours to dig ourselves out of the driveway.

    Well.......I could make pancakes.....or.....I could make.....blueberry buttermilk breakfast cake!!!
    But......I guess for brunch.....pancakes win out!
    I am sure they were scrumptious....and all your men loved them. ♥️

  12. I don't usually make sweet pancakes, so I thought I would have a go at this one. My local supermarket doesn't stock buttermilk of blueberries so I'm stumped!

    So I bought a double chocolate gateaux and some double full cream to pour over it. Yummy.

  17. As part of the anti-inflammatory diet I am on to help with the Lyme's stuff, I have been gluten free since Christmas. I might just hang around your blog and drool for awhile. And I saw robins here too, what is with that?

  18. Ok so now you're getting my mouth watery! lol and I just finished my lunch! There's something about blueberry pancakes or waffles. By the way, I love making brunches for family and friends. I started this "little tradition" last year, and I love to make them buttermilk waffles with or without the blueberries. I also have strawberries and bananas + wip cream for topping, then of course can't forget about the scramble eggs and turkey bacon. This is something great to give back to the people you love in your life. This is my year-round random act of kindness. I'm hoping to do one before the month is over. :)
