Chewy Ginger Cookies


I think this is my all time favorite cookie.
I've been baking them since I was in high school!
Thick, chewy, spicy and wonderful.


I thought they would pair nicely with pecan and pumpkin 
pies on the Thanksgiving Buffet this year!
Nice to already have them in the freezer!

I've posted the recipe before, but here it is again...

Chewy Ginger Cookies

1 c oil
2 c sugar
1/2 c molasses
2 eggs
1 t salt
1 t cloves
1 t ginger
2 t cinnamon
4 t baking soda
4 1/2  c flour

Have mixer running and add ingredients in the order given.
Shape into balls, roll in sugar and bake 350 for 8-12 minutes,
depending on the size. (I use an ice cream scoop and sprinkle sugar
on the tops instead of rolling in balls~ so much faster!)
They should be dark and crackly.


And yes, before you ask...  The little plate was left for the auction trash.
In fact, there were two identical ones there just waiting for me to scoop up.

  3. These were the first cookies I baked as a young girl. They have always been special to me because of that, and because they are just plain delicious! :) I taught Serena how to bake them this year and she is quite proud of herself. We all love them with icy cold milk. Sounds like your freezer is chock full of goodies.

  4. I only have a hand mixer. Will it work if I mix in the flour and dry ingred. by hand? They look and sound so good.

    1. I'd try your hand mixer anyway. You might have to do the last bit by hand...or make Don do it! ha.

    2. Thanks, sounds like a plan! Been thinking of investing in a really nice counter mixer, but should have done it when I was younger I guess. Maybe it's never to late!

  6. I love ginger cookies. I always use one of those cookie scoops when I make them and they turn out so perfect everyone thinks they are from the store. Still haven't figured out if that is a good thing or a bad thing. Beautiful trash too.

  11. I love me ginger biscuits. I do. My son bakes them and it's one of those moments when my wife and I look at each other and go: "Hmmm... this is the reason why one has children". :-) I love the little kick in them. Many thanks. This post definitely spiced up my day! :-)

  14. This cookie is absolutely traditional for my Dad's side of the family. We call them Molasses but they are the same cookie. They are a favorite of mine my entire life! I think I learned to LOVE coffee along with this cookie as dipping them ever SO QUICKLY in coffee (as they will fall apart quickly) is DELICIOUS!
