I always thought I made the best buttermilk pancakes!
Topped with real butter and my homemade syrup, they
just couldn't be beat! Or so I thought, until I saw Catalina's recipe!
And now I'm naming her buttermilk pancakes as the best ever!
The ingredients were almost the same but the proportions were
different. I especially liked the way they didn't act like sponges
and soak up all of the syrup. They were thick and fluffy. Yum.
4 c flour
4 t baking powder
2 t baking soda
1/2 cup and 1 T sugar
1 t salt
4 eggs
4 c buttermilk
1 stick melted butter
2 t vanilla
******
Whisk dry ingredients and wet ingredients in 2 separate bowls.
Then whisk together. Batter will be lumpy.
Proceed on lightly buttered griddle as with any pancakes.
I set mine on 350 degrees. Let get dark golden brown and
dry around the edges before flipping.
Top with butter and syrup.
I also tried another hint from Rhonda who said that she makes a big
batch and freezes her pancakes. Catalina's recipe makes 21 large
pancakes (about 5" across) So I made the whole batch and froze
half of them. Thanks, ladies! Sunday brunch will be super easy
and fast this weekend!

*sigh* I remember my childhood, when I used to cover my pancakes with maple syrup! I would have loved a pancake that let the syrup soak in! Oh, well, can't get away with that now...
ReplyDeletewe got through pancakes like water...its about all cole will eat for breakfast...
ReplyDelete"shakes head back and forth"
ReplyDeleteAre you trying to drive me nuts with food
Oh wait I'm already there how rude
Look beat you to the comment on that
Guess now you might pull away the welcome mat
Hey I got an idea
May be a bit messy I fear
But I could use them as frisbees
Take them out and throw them into the trees..LOL
Silver ~ make them for someone else and just take a bite or two!
ReplyDeleteBrian ~ well, you need to make these for your family. T will appreciate it the most! :)
Pat ~ frisbees? haha...as long as you let me use your chicken nuggets for hocky pucks. haha.
ReplyDeleteI rarely get to cook for anyone else. I can cook, but rarely have the opportunity.
ReplyDeleteWell, invite her over for breakfast, dear. Start flipping those pancakes. ha.
ReplyDeleteHey go for it
ReplyDeleteI won't have a fit
It be really funny watching you try and shoot a chicken nugget into a net
I'd even make a bet
That you might hit the pole
And prob will score maybe one goal
I'm about to reach through the computer screen and grab these. YUM!
ReplyDeleteI'm trying these for sure,, I've been looking for a good pancake mix.I always end up going back to Aunt Jemima, mine always turn out flat and rubbery,, or thick and doughy, ,, this sound great,
ReplyDeleteHumm, must be the 4 cups of buttermilk..yum! ;D
ReplyDeleteSometimes after a hard day there is nothing better for dinner than breakfast and buttermilk pancakes! :)

YUM!!! I have not made pancakes in a LONG while but I am NOW!
ReplyDeleteI can't even THINK of the last time I ate a pancake. These look wonderful.
ReplyDeleteI make pretty mean pancakes, may have to give this a shot though!
ReplyDeleteIs it breakfast time already? Pancakes were a favorite childhood breakfast and there was always plenty of real maple syrup from Dad's great uncles. No one ever told us not to use "too much."
ReplyDeletei make buttermilk pie and always half two cups of buttermilk left over.... now i can half this recipe and use the buttermilk!
ReplyDeletefast and yummy....just what i like in a recipe!
thanks betsy!
laurie ~ aunt jemima? no, no...try these! You'll love them!
ReplyDeleteZuzana ~ I always forget your traditional breakfast is a sandwich like we would have for lunch! I have a nephew that lives in Estonia and that's what they eat, too. Probably healthier than our american stuff. ha.
ReplyDeleteAustin ~ I know you can cook! Hope you like these!
ReplyDeleteMmm. Have some ready, I will be over the week after next.
ReplyDeleteTried this for breakfast. Got thumbs up from my kids. Thanks for passing on a winner!!

ReplyDeleteMmm, they look good enough to eat - I'm drooling here.
ReplyDeleteThat stack of pancakes look wonderful. You could send some my way! :)
ReplyDeleteOh man, Betsy, after seeing these pancakes I am so wishing I didn't have chicken marinating...breakfast for dinner sounds so much yummier!
ReplyDeleteOooh, I knew I shouldn't have come in here when I saw the thumbnail pic! These look 'yummo' and the recipe's enough to feed an army!
ReplyDeleteThat stack of pancakes is making my mouth water...yum, yum. I love pancakes and syrup.
ReplyDeleteI'm so happy you like the pancakes! They look beautiful and I love how you piled up so huge lot of them, it looks great! I usually scale down the recipe to make lower amount of them when I'm alone or so because I had no idea I could freeze them. Thank you for the tip, I gonna do this next time :) Btw, your homemade syrup sounds so good!
ReplyDeleteyou know, I make excellent pancakes but don;t actually like them much myself. Now, waffles, that;s a different story. :)
