Vidalia Onion Rings

The Mister requested homemade onion rings with our grilled
burgers this weekend. They are especially yummy while
Vidalia Onions are in season!
Onion Rings
2 large onions, peeled and sliced
2 eggs
1/2 c buttermilk
1 3/4 c flour
1 t seasoned salt
1 t garlic powder
1 pinch cayenne pepper
2 T cornstarch
1/2 c Panko bread crumbs

Heat frier to 350 degrees
Have paper towel lined pan set aside.
Whisk eggs with buttermilk, set aside.
Whisk dry ingredients in shallow pan.
In batches of 8-10 slices, dip onions
into liquid, dredge in flour mixture
and fry, turning once until nicely browned.
Lay on paper towels to drain.
Sprinkle with additional salt while hot.
Eat. Enjoy. Repeat. :)

  9. Ooh, I wish I'd had this recipe earlier today, it would have complimented the barbecue just perfect !

    Our old pastor moved away to Vidalia, Georgia. I wonder if they serve Vidalia onion rings there?

  12. Carolyn ~ you can use a DEEP stock pot and a candy thermometer...just don't leave the stove with the kiddos around!

  13. A true southern favorite! We have friends that live in Vidalia, Georgia. As a wedding gift they gave me a cookbook devoted exclusively to cooking Vidalia onions!

  20. It is a good thing I did not have this recipe earlier today. It does make me want to get out the deep fryer and make some with Buttermilk Fried Chicken. I put the deep fryer away because I was frying everything and was not good for my weight, but funny thing is that my weight still is not going down. Maybe I should just get out the fryer anyway because at least I was enjoying everything fried. Oh those shoestring french fries are so yummy too. Okay, I better get the steamer out and the wok....

  21. Drooooooooooooool! Sorry...there was a place we'd go, just for th' onion rings. Sadly under new owners that could care less about homemade goodies...making note to get some Vadalias...and Panko( I ken just which aisle it's in, at the grocery ) ;)
