Mini Pecan Tarts

Mini Pecan Tarts
****
1 c butter, soft
6 (six) oz. cream cheese, soft
2 c flour
1 egg
3/4 c brown sugar
1 T melted butter
pinch salt
1 t vanilla
1/2 c chopped pecans

Cream butter, cream cheese. Add flour.
Chill 10 minutes until easier to handle.
Divide into 48 balls. Press into greased mini
muffin pans.
Whisk remaining ingredients and spoon into
crusts, filling half way. Filling puffs up
while baking. Bake 350 20-25 minutes
until light golden. Mine took 20 minutes.
Yum!

  4. I remember my mom making these all the time (we called them pecan tassies), but I've never made them. I actually have no idea whatsoever if the recipe is the same though. It's been eons since I've had them, and they sound so good right now. With coffee, of course!

  9. Betsy, the food you make always looks SO good! So far, I have made your Minestrone Soup and your Best Chocolate Cake recipes. Both were a huge hit with my family. Even my 19 month old daughter ate the soup. Keep your amazing recipes coming!
