Bay State Muffins

I'm not sure why these are called Bay State...maybe they
originated in Massachusetts! Anyway, they are a
filling muffin with a hearty texture. Moist and chocked
full of fruit, veggies, and nuts....they are good for you, too!
Bay State Muffins
2 large apples, unpeeled
1 c fresh, raw cranberries
1 c carrots
1 c pecans
Buzz all of the above in food processor.
Spoon into a large bowl and add:
1 1/3 c sugar
1/2 c oil
2 eggs
2 t cinnamon
1/2 t salt
2 t baking soda
1 T baking powder
Stir until combined, then gently fold in
2 1/2 c flour just until combined.
Bake in muffin tins 375 for 25-30 minutes.
Toothpick test. Makes 18 muffins ~ so eat,
freeze, and give some away!
Yum!

  11. Well Betsy...I did make your muffins and they are by far now one of my Favorites...I sent some next door to the neighbors and the Hubs and I had two each!!!! as soon as they came out of the oven! FABULOUS!!!! Lots of good nutrition in there too! Thanks for making our day a little sweeter!!!

    They look wonderful. At least I'm sure I'll like them. I have got my picky one to eat blueberry muffins, at least it's a start!
