1 c milk
1/4 c sugar
1/4 c oil
3 eggs
2 t vanilla

Whisk all above until blended.
Spread in greased 9x13.
Top batter with 4 c blueberries.
Drizzle with 5 T melted butter.

1 c sugar
1/2 c brown sugar
1 t cinnamon
1 c chopped pecans
~~~~
Stir topping together and sprinkle
over the blueberries
~~~~
Bake 30-35 minutes ~ toothpick test.

Another winning recipe. I go through these phases where I bake with Bisquick...I like making Bisquick herbed biscuits in the fall...
ReplyDeleteThis seems like a really easy recipe. I just went to an orchard last weekend and picked a pint of blueberries with the children in the summer program where I work. This would have been a good recipe for those blueberries... I guess I will have to go back... lol
ReplyDeletelavinia ~ I hadn't bought bisquick in years! Rebecca at the Tea Society posted one of those veggie pies..I think I remember you being in on the conversation....yum! I just had to go buy a box. I've had this recipe for years and needed something for a Sunday School snack last weekend. I want to bake some of those impossible pies soon!

ReplyDeleteI have 2 big bags of freshly frozen berries in the freezer and I have been wanting to try a blueberry recipe like this. I hesitate because I am afraid that without company to share it with I will eat it all myself. Anyone want to drop by for dessert?

You could divide this in half and bake it in an 8x8, or bake the big one and take it to work! I know what you mean, though, I find myself eating something like this for breakfast, dessert after lunch and supper and then late at night...before you know it, I've eaten 2/3rds of it!
I buy that gigantic box of Biiquick in Costco and never remember to use it for anyting but pancakes! This looks great! I made another blueberry tart yesterday because I had too many berries and was afraid they would spoil.
ReplyDeletePat ~ you can freeze your blueberries, too. Just lay them in a single layer on a jelly roll pan and freeze for about 45 minutes. Then scoop them into a freezer ziplock bag. They won't stick together and you can pull out just what you need. I do this with a lot of berries in the summer. That way you don't have to eat them all at once.
