What's For Dinner?









  1. Ahi tuna steak with peach salsa.
  2. Sauteed veggies and ham, topped with an egg.
  3. Nachos.
  4. Spaghetti squash stuffed with sun dried tomatoes, chicken, and cheese.
  5. One pan dinner in the oven.
  6. Chilled quinoa and salmon salad.
  7. Fried catfish with peach salsa.
  8. Puff pastry tart with prosciutto, peaches, goat cheese and rosemary.


So that's what we've been eating lately!
Anything good coming out of your kitchen?

  4. Wow, all of these looks yummy. Not much good out of my kitchen today.
    With the temperature at 107F I sure didn't feel like cooking.
    We had artichokes for dinner...it was so early that now at 10:30 my tummy is growling.
    Seems like everything that sounds good to me isn't on my diet. Guess I will drink some water and go to bed.

  5. Hi Betsy - love the way you use so much fruit in your meals ... it's what I'd do too - you just remind me! You are certainly utilising the peaches so well ... I'm looking for them here - may be a bit early ... as I only want to make sure I get quality ones - so I can savour the taste. Delicious and asparagus ... I must get some more before the season closes ... cheers and have a happy rest of the week - Hilary

    1. We love fruit...and you can add it to savory dishes, too, which I like a lot!
      Asparagus is a favorite of ours...we've had it a lot this spring. I'm thinking about
      planting some...hmmm....we would eat it, that's for sure!

  7. DELISH!! We've had some yummy things going here, too. But, I never seem to want to take time to get a pic! LOL! Scarfing them down as quickly as they are done! I'd love to sit at your table every night! You are a wonderful cook, Betsy! blessings ~ tanna

  11. Yummmmm! These all look so good but the asparagus catfish meal is speaking to me. Can't wait until I can inhale veggies again. I did have a few bites of asparagus a couple weeks ago, and it didn't kill me. Always a good thing!
