Here's what we've been eating for dinner lately....
- A 'clean out the frig' salad.
- Baked spaghetti squash stuffed with chicken, sun dried tomatoes, parmesan, spinach, garlic and fresh basil.
- Crispy talapia and cole slaw.
- Grilled turkey pastrami on rye.
- Chicken salad with fresh pineapple, grapes and pecans.
- Sweet and sour chicken on rice.
- Homemade spaghetti and meat sauce.

ReplyDeleteI am still on the low residue diet for another four weeks and then I can start to carefully branch out a bit.
I can't wait. It's been eight months of bland, white, no-fibre eating and I can't wait for some more variety! I so miss salads and veggies.
Yay to you for the progress! I'm sure you're feeling like a totally new and different person!

I took some seeds home with me in 1976 - I think we got one or two squash from them ... I'd no idea how to cook them or what they were ... but the squash have been in my tummy-heart ever since! I do agree I'm so lucky in that respect. The Mister isn't picky at all and eats anything I put in front of him. Makes it so easy!
