What's For Dinner?






Here's what's been happening in our kitchen lately...

  1. Pork tenderloin with baked pineapple and teriyaki rice.
  2. BLT's.
  3. Breaded chicken tenderloins, roasted baby potatoes, slaw.
  4. Grilled Ahi tuna steaks, spinach salad.
  5. Clean out the fridge soup ~ smoked kielbasa, potatoes, corn and zucchini among other veggies in a creamy chicken stock base.  
Pull up a chair!

    1. I absolutely did go shopping today! And I wiped out the fridge before loading it
      back up...something I love to get done but fail to do half the time. haha.
      Fridge is clean and full. Yay!

  4. I love being creative with 'clean out the fridge' soups - but you are a great deal more creative than I in your day-to-day dinners. They all look delicious.

    1. yes...that was so good....just put it in the oven with the pork...all drizzled with teriyaki sauce...so delish!

  7. I had a "clean out the fridge" day today as well! With what I found I made six bruschetta slices (Google it), a Spanish omelette, a Quiche with bacon, some vintage cheese, shrivelled spring onions and some questionable mini-tomatoes (they could have been grapes a while back, but it was difficult to tell).

    Invited a friend round, J, and we managed to eat the lot between us.

  9. I took a friend out to lunch today for her birthday. I'm stuffed but wow, everything you posted looks so good.

    1. Mine!~ haha....but in my defense, they were bite-sized..didn't even
      have to cut them...just pop them in your mouth! yum.
      I love potatoes...must be my Irish dna. :)

  12. Hi Betsy - just done the same with a whole lot of left over veggies - into a casserole pot they went, covered with some bacon and baked, hot and crispy ... good leftovers! I love your meals ... always a mix of fruit added in ... Cheers Hilary

  13. I wasn't hungry last night, when I saw your post. But this morning.....I could scoff down every one of them. My Irish DNA loves potatoes, too. Our clean out the fridge soup is usually homemade vegetable soup. I love it, especially in cooler weather with cornbread.

    1. I don't serve soup at all during the warm months....but it's a favorite when it's cold! Easy on the cook, too...love that.
      And with cornbread? Even better!
