What's For Dinner?

Here's what we've been eating lately...quick
and easy summer dinners...

  1. Grilled cheese burgers with cole slaw.
  2. Fried eggs on english muffins.
  3. Cucumber salad topped with chilled grilled salmon.
  4. Balsamic pork tenderloin sandwiches and sweet corn.
  5. Chicago dogs with deep fried asparagus.
  6. And we have to end with something sweet, of course!

    1. Oh wait, did you use the same batter on the asparagus as the pickles?

    2. Yes, I did! I had leftover batter, so I tried it on the asparagus....I like it better than the pickles!

    3. Cool! I'll have to try that. What kind of dressing is on your cucumber and salmon salad?

    4. I made a vinaigrette with 1/4 c cider vinegar, 1/4 lemon infused olive oil, 1/4 c sugar, salt, parsley and italian seasoning. The salad is best if it marinates a day (dressing, cucumbers, celery, green peppers)...then add the crunchy stuff on top of your salad just before serving.

    5. Sounds good! I'm definitely trying that.

    1. At least your status quo
      is different than years ago.
      Nuggets and pringles ruled.
Corn and carrots, and apple juice.
Now you have a little color
which is sure to please your mother.
      lol....

  3. I went shopping this morning and saw a 'new product' in the chiller cabinet, "American Style Deli Slaw", so I thought I would try it just to see if it was different to the British Coleslaw. It was! So now I know what your No. 1 picture tastes like. I have just made a cheese burger and put some Deli Slaw with it, and I am sitting here munching on the burger while writing this . . . . Yum!

All your other meals look great too, I just can't keep up with you! Ha.

  4. you guys sure eat well. looks so good. we ate a lot of zucchini cobbler this week for a treat. The neighbor shared his garden fare so I baked. If you haven't tried it and you have zucchini you might like it. We have a devil of a time finding good corn on the cob the last few years. I envy your good local corn.

    1. I'm intrigued by that zucchini cobbler....is it savory or sweet? So nice of your neighbor to share his garden stuff!

    2. Sweet. Tastes like apple, not zucchini. If you google Taste of Home has a good recipe. Not low fat though. It was nice of him to share. He already shared a lot with the bunnies, squirrels and chipmunks!

  9. I think you should put warnings on your food posts. Now I am hungry and a bowl of cereal just lost its appeal. Id be pleased with just one of these delicious looking meals a WEEK. You amaze me. We had frozen pizza tonight. OK, we did have sweet corn too.
