One Last Thought of Autumn


Time to do something with those grey and white pumpkins!




I cut them in half, put them in my biggest roasting pan
and sprinkled them with pumpkin pie spice,
brown sugar and kosher salt.




I baked them for one hour at 350F degrees.





It smelled like pumpkin pie all through the house!




Not sure yet what I'll make with them,
but for now I scooped the flesh out and
put it in freezer bags.

    2. Pie sounds good, especially since I didn't make a pumpkin pie for Thanksgiving! Pumpkin bread sounds good, too.

  3. Ah, I just did more pumpkins yesterday and the weekend before as well. The weekend before I made spiced pumpkin apple sauce. Fun stuff. I'll use for bakes or as a side to a pork dish.

    1. We had some of it tonight with dinner just as a vegetable...a little more butter and brown sugar on it. It tasted very similar to an acorn squash...very yummy!

  7. I think there is possibly nothing more wonderful in all the wide world than pumpkin pie.
    I have never cooked it like this before. Must you contend with removing the seeds or are they suddenly delicious when prepared in such a manner?

    1. You forgot to add..."for breakfast". haha.
      We ate it tonight just like acorn squash and it was very good. I was surprised.
      I did scrap off the seeds, add more brown sugar and some butter...very tasty.
      Still need a pie, though! :)

    1. Well, we ate one little half....four quart bags went into the freezer. It was so good eaten like a squash that I can us eating the rest like that.

  9. What did you do with the seeds? Rinse them free of strings, toss with olive oil, Mexican chili powder, salt, maybe a little extra cumin or oregano, then roast at 425 F for about 15 minutes, tossing every few minutes so that they toast evenly. Yummy pepitas to eat plain, sprinkle on salad, soup, a savory note in trail mix, etc. Very nutritious too.

  11. Oh soooo yummy!!!!! You could eat it just like that. You don't even need to make anything out of it. Fall has the best foods.
