The lovely Martha, who makes beautiful pies, included
me in a pie baking challenge.
Well, how fun, right?
Especially when you get to eat what you bake!
This was the easiest pie I ever made.
Rustic, free form...I didn't even peel the peaches.
I didn't even use a recipe!
Just a single scratch crust on a cookie sheet,
filled the center with peaches tossed with sugar, flour, cinnamon
and butter. Folded the edges up and brushed them with
heavy cream. Baked 45 minutes at 400.

It's that same crust I always use...Martha Stewart's pate brisee. It always turns out great!

I like them in pies but without too many spices.

DeleteThere is something about this that is so visually appealing. Just beautiful. And I bet it tastes amazing! I do not seem to have great luck with buying peaches. They are either too hard, don't ripen properly and become mushy rather than juicy. But last summer I chose perfect ones! Haven't had any this year yet.

ReplyDeleteI had never either but I will certainly do it again...I had that thing ready before the oven preheated. Ha. I'm thinking savory, too....some chicken cheese and veggies would be yummy in that (without the peaches, of course. Ha)

Deleterustic .....perfect for a Fall dessert.....beautiful. I will try it with pears from my neighbor's tree soon. I made your stuffed zucchini tonight. I added fresh shucked corn from the cob to the filling. I precook the zucchini in the microwave for a minute or so which makes them easier to scoop out the pulp and then all you need is maybe 20 minutes in the oven to heat it thoroughly and melt the cheese. Just served with some cantaloupe for a great supper. Thanks for sharing Betsy.

That's my kind of pie! Highbush cranberries are almost ripe..first pie I make with them is a rustic pie. Can hardly wait!
