I'm still picking about 4 cups of strawberries a day
from my little garden in the back yard!
And I have to thank Brian for the idea of shortcake!
Of course! Nothing better than fresh fruit desserts!
Strawberry Shortcake
Betsy's Buttermilk Biscuits
4 c flour
1 t salt
1 T baking powder
2 t baking soda
2 T sugar
Whisk above ingredients in a medium sized bowl.
With a pastry cutter, cut in
1 c vegetable shortening.
Add 1 3/4 c buttermilk and stir with a fork
just until combined. Add more milk if needed
to have it all come together.
With floured hands, pat out onto floured board 1 1/2" thick
or straight onto a cookie sheet covered with
parchment paper. Cut into 12 squares.
Sprinkle with a little sugar/cinnamon mixture.
Bake 375 for 20 minutes. Check center biscuit
by lifting up the top layer to make sure it is
baked through in the middle.

After cooled, slice and layer with fresh sugared
strawberries and real whipped cream.

Yes, a great way to use them! The boys have been eating strawberries, too! They always eat the store bought ones, so it's nice to serve some home grown ones!

I don't think you'll be disappointed! They had those hanging ones at the garden center when I was there on Friday. They were covered in fruit and looked SO cute!

I can't remember the last time I have had strawberry shortcake either. Boyyyyyyyyy, it looks so good! I am smiling thinking of your boys inhaling strawberries. Do they like strawberry jam too? Friends of mine make a strawberry freezer jam that's quite nice.
ReplyDeleteNo jam...haha..because they wouldn't eat anything you put jam on! Well, Alex likes biscuits but he prefers them plain. But fresh strawberries they inhale every day! Freezer jam sounds yummy...and a biscuit...right now!

Strawberry shortcake will forever be a favorite. I get hungry just thinking about it and my tummy is already full!
