Butterscotch Banana Bread


I had over ripe bananas to use up this week and happened to
think butterscotch chips might be good in it.  So, I looked online
to see if it had ever been done before or if I was about to
create something original!  Well, it turns out that this combination
has been around for years!  Who knew?
This particular recipe was given a 5 star review so I chose it.
It was wonderful, moist, and such a nice change from
plain old banana bread.  I will certainly be making it again!


The house smelled wonderful while it was baking!


I had enough bananas to double the recipe and make two
loaves.  One is going to work with The Mister.
That is, if we don't dig into it before he takes it!



The butterscotch chips melt into the bread as it bakes!

Butterscotch Banana Bread

For One 9" Loaf

2 ripe bananas, mashed
3/4 c sugar
2 eggs
1/4 c butter, melted
1 t vanilla

Mix above ingredients well in mixer.

In a separate bowl, sift....

1 3/4 c flour
2 t baking powder
1/2 t baking soda
1/2 t salt
1 t cinnamon
1/2 t nutmeg

Add dry ingredients to the mixer, alternating with

1/4 c milk.  
Mix just until combined.

Stir in 6 oz butterscotch chips
and 1 c chopped pecans.
(reserve a little to sprinkle on top before baking)

Bake at 350 in greased 9" bread pan
for 50-55 minutes.  Toothpick test.

  4. I have four bananas on the verge of being just perfect .... I wonder if I added some shredded coconut to the recipe how it might taste ~~~ I'm going to do it! Coconut and butterscotch, yummy. Maybe a few raisins, I know now I'm getting goofy.

  5. That looks easy enough!!
    When I make my banana-blueberry-lemon loaf...I cheat!!!...A lot!
    I use a cake mix...and add in the fruit...usually frozen bananas...and frozen berries..ha!
    Now you know!
    That dos look delicious...I bet I could just add the butterscotch chips to my cake mix!
    Picked up a quart of Buttermilk today...YOU know what that means!!!

    1. Do you??? haha...I'm not really a cake mix girl...although I have 2 recipes I love that call for one. I do love your blueberry buttermilk breakfast cake, though...I've made that several times. And I always have buttermilk on hand!

  11. so its good? i never thought of putting butterscotch in banana bread.
    have loved it since i was a kid. its what the old ladies used to pay
    my dad when he did housework for them...that and zuchinni bread

  12. That sounds wonderful! Not quite as wonderful as peach pie ;) , but wonderful none the less.
    I wonder how zucchini would be with butterscotch chips... Nah, maybe I'll stick to chocolate for that.

  17. Thanks for sharing the recipe, Betsy, it sounds yummy! I'm definitely going to make it, but since someone gave my husband two large zucchinis yesterday, I first have to make zucchini bread. I'm using the recipe you posted last year...I just have to decide which version to try this time!

    1. Well, my favorite was the blueberry and lemon, but there were are really good! I haven't made any zucchini bread yet! We've just been eating it as a veggie!

    2. That's the one I was thinking about trying! Our 4 blueberry bushes produced wonderfully this year and the chipmunks didn't eat near as many as they typically do...lol. It's so nice not having to ration them for a change!

  21. That cake looks delicious. My daughter has started making banana cake whenever we have very ripe bananas at home. I insist on keeping my share and using them for my regular smoothie! :-)
