Pineapple Upside Down Cake

This is not your mother's pineapple upside down cake!
No box mix, no plastic red cherries, no canned fruit.
This is the real deal...real butter, fresh pineapple,
real rum, real whipped cream.
Oh yeah, it's a dream! ha.

It's also C is for Cake in the A to Z Challenge!



And here it is!  Moist, sweet, fruity and delicious.
I served this for Easter dinner 
and I'll be making it again!

I adapted the recipe from Gourmet, Feb. 2000

Pineapple Upside-Down Cake

Topping

1/2 medium pineapple, peeled, cored, and cut into 3/8" slices.
3/4 stick butter
3/4 c brown sugar
3 T dark rum

Melt butter in saucepan over medium heat.
(If you are baking cake in a 9" skillet, then use that now.)
Add brown sugar and rum.  Simmer and lightly boil
for 3 minutes.  Remove from heat.
Arrange pineapple on top of caramel in the skillet.
Or if you are baking in a 9" cake pan, pour caramel into
greased pan and arrange pineapple on top.

Batter

1 1/2 c flour
2 t baking powder
1/4 t salt

Whisk together in bowl and set aside.

3/4 stick butter, softened
1 c sugar
2 eggs
1 t vanilla
1 T dark rum
1/2 c unsweetened pineapple juice

In mixer, beat butter and sugar until fluffy.
Add eggs one at a time, then the other liquids alternately
with the flour mixture.  Mix just until blended.

Spoon batter over pineapple in the cake pan or skillet.
Spread evenly.  Bake until browned and toothpick test
comes out clean.  Recipe said 45 minutes but mine
took 60.  Cool 5 minutes, cut around edges and invert onto plate.
Replace any caramel or pineapple that stuck in the pan.

Serve warm or at room temperature.

I thought it was better after it had aged one day.

  3. Pineapple Upside-Down Cake was my favourite growing up and was always made for my birthday. This one looks truly delicious - can practically taste it. Stop taking such great photos or I will be tempted to lick the screen!! Hee hee! :-)

    1. You'll have to give it a try...it's a nice small size, a single 9" layer. Super moist. It was better the second day when the flavors melded.

  9. Hi Betsy,

    I do not know if you buy anything from Avon but they are selling a pineapple slicer/corer gadget. I love gadgets and one can never have too many of them, well one can but who cares. Anyway it seems like it would be easier than all the cutting one has to do for cutting a pineapple and all the slices are the same size. But this cake looks so good and honestly I would probably enjoy adding the cherries. I love the cherries in the center of each pineapple. I now have a broken computer screen because I was trying to take a bite and the fork broke the screen. Seriously, this looks so good. And as Alan says C is for Yummy!

  10. Oh, boy! My mom used to make Apricot Upside Down Cake from scratch, except that she used canned apricots. She baked it in an iron skillet too and it was the best!!!

    1. Apricot? Oooh..that sounds good. And I think I have a can of apricots in the pantry. I picked them up off the scratch and dent section at the grocery! Might have to try it! I have a whole bottle of rum to use, you know. lol....

    Making it from the ground up
    Upside down with your measuring cup
    What id it was right side up though?
    Would it taste the same and look different with its right side flow?

    1. The fruit and topping is in the bottom of the pan
      and after it bakes, you flip it over and shazam!
      It's upside down
      but don't frown.
      It's better that way
      with the pineapple on display.
      hahaha.

  13. My mom always made a homemade Pineapple Upsidedown Cake, but growing up I hated pineapple so never once tasted it. Now I love pineapple and my mom's gone :( and I should ask one of my sisters if they have her recipe. Maybe yours is very similar. Thanks for sharing!

  15. It is SOOOOO pretty and a perfect choice for Easter! Guess what? I have a Betsy's Best Chocolate Cake all frosted up and ready to go for Mitchell's 16th birthday party tonight!!!! It is his FAVORITE! I cannot WAIT to eat a slice!
