This-N-That Nachos


Don't you love it when you have a tiny bit of several
things in the frig and you throw them together to 
create something really yummy?
That happened to me Sunday night when I looked in 
the frig and saw a cup of rotisserie chicken,
a cup of salsa, a little guacamole and some fresh
cilantro that needed to be used up.
I added some cheddar and cream cheeses,
a little can of chopped green chilies,
lots of chili powder and cumin and served
up some yummy spicy chicken nachos....
and we cleaned out the refrigerator! ha.

    1. It's kind of fun being creative like that, isn't it? Mine usually turn into some kind of soup, so this was a fun change of using up the scraps. :)

    I always say..."If I am ever really rich...I will have clean sheets every day"...lovelovelove clean sheets!!

    1. I served everyone a plate like this and The MIster said, "Aren't you going to take a photo?" haha...he knows bloggers, doesn't he? And mine was the only one that still looked good. The men stir things all together...which drives me crazy. lol....it has to stay pretty, right...down to the last bite! ha.

    3. Oh good...I'm glad you get it. They do that with spaghetti, salad...everything! lol.... I like the layers and prettiness of it. :) But at least they eat my cooking!

  11. I must admit, I have always thought of nachos as potatoe crisps that have lost their way, but perhaps I should re-evaluate things.

  13. James and I stopped at a little Mexican restaurant on our way home Sunday night and had something that looked quite similar and tasted very yummy. We shared a Fiesta Plate and both went home happy. And we decided that that driving east to the middle of nowhere got us a better Mexican restaurant than driving toward Rochester.

    Love successful clean the fridge nights!

  15. Did you know you could use Fritos if you do not have the tortilla chips, or if you have corn tortilla you can fry them up or even coat with some oil and bake them in the oven. Nachos can be a cheap meal too. Throw some refried beans or chili on top of the chips, some chopped onions, green chilies, cheddar cheese, heat in oven then top with chopped tomatoes, sour cream, sliced black olives, guacamole, and some more cheddar cheese and you have a great meal. And you can also add chopped steak, chicken strips, fish, or taco seasoned ground beef or turkey to it. Basically you can use any combination of,the above. Which you can also use in tacos, flour tortillas, and tostadas. Oh how much I love Mexican food, what can I say it is in my Mexican blood. I think we always have tortillas in the house. Breakfast burritos are also so good. And fresh tamales, oh yeah!!

    And because you like avocados you might like them this way. Take a ripe avocado, peel it, mash it in a bowl, heat a flour tortilla then spread the avocado onto the tortilla, salt to taste (I like a decent amount), fold it in half and then chow down. I sometimes add cottage cheese to make it healthier but not often. Anyone who likes avocados that sees you eating this will want you to share but you are lucky if no one likes avocados there. Now I have to buy some avocados. I love avocados.

    And your nacho picture is great, please thank the Mister so we were able to see it.

    1. Oh, I love it, too! It's what I craved while pregnant with Taylor and he loves it as much as me! haha. I'll have to try your avocado 'sandwich'...yum! And yes, I agree the best part is how versatile nachos are...really just anything you have...and the more toppings the better! I'm hungry now just thinking about it!
