Don't you love it when you have a tiny bit of several
things in the frig and you throw them together to
create something really yummy?
That happened to me Sunday night when I looked in
the frig and saw a cup of rotisserie chicken,
a cup of salsa, a little guacamole and some fresh
cilantro that needed to be used up.
I added some cheddar and cream cheeses,
a little can of chopped green chilies,
lots of chili powder and cumin and served
up some yummy spicy chicken nachos....
and we cleaned out the refrigerator! ha.
♥
Mmmm, it does look yummy!
ReplyDeleteI'd share...but they are all gone! :)
Deleteand Yuji is first! :)
Betsy I love those nachos; look yummy and temting:) love this plate!
ReplyDeletethey were very yummy...I love anything spicy like that!
DeleteHehe Yuji beat me by a minute lol
Deletemaybe you can get the crown back tonight. ha.
DeleteMmm, that looks perfect! And yes I love when meals come together like that!
ReplyDeleteIt's kind of fun being creative like that, isn't it? Mine usually turn into some kind of soup, so this was a fun change of using up the scraps. :)
Deletedang...that looks good...we go through some nachos here....smiles...
ReplyDeleteso do we...yum!
DeleteThat's the way to roll. Go you.
ReplyDeleteNow if I had only had a WW spoon or something to make them turn out even better, right? haha.
DeleteI always throw together what is there
ReplyDeleteBut it's the same old same old at my lair
Oh well
Does look swell
At least you always know what you'll be getting
Deleteand that it will be finger-licking.
Not that you'd do such a thing
but would taste good if you gave it a ring.
haha.
haha never did do that
DeleteUnless ketchup got on them at my mat
Then may like it off though
Or I get a paper cut or something at my show
like or lick
Deleteeither will do the trick.
ha.
sorry, could not resist
as you put your editor to the test!
haha one handed typing can sure put you to the test
DeletePlus thanks to the cat I have to hit some of the buttons hard, what a pest
You need to make the cat take dictation
Deletejust to cause him some irritation!
I always love a plate of nachos. They are just the perfect snacky kind of meal.
ReplyDeleteme, too....so many varieties, too!
DeleteI love it when something like that happens. Looks great!
ReplyDeleteyeah, and you can hardly call it cooking...lol...
DeleteLove that....love spicy food...and my favorite avacadoes!!!
ReplyDeleteI always say..."If I am ever really rich...I will have clean sheets every day"...lovelovelove clean sheets!!
Cheers!
Linda :o)
I'm the only one here that eats avacadoes! I guess I should be glad...don't have to share! ha.
Deleteoh me, too...love the clean, fresh sheets! And if you were really rich, someone else could make up the bed! haha.
Mine never looks that delicious.
ReplyDeleteI guess it's time to go grocery shopping!
I served everyone a plate like this and The MIster said, "Aren't you going to take a photo?" haha...he knows bloggers, doesn't he? And mine was the only one that still looked good. The men stir things all together...which drives me crazy. lol....it has to stay pretty, right...down to the last bite! ha.
DeleteThe Mister understands!
DeleteI'm with you. I couldn't mix anything together. It's just not ethical!!
Oh good...I'm glad you get it. They do that with spaghetti, salad...everything! lol.... I like the layers and prettiness of it. :) But at least they eat my cooking!
DeleteI must admit, I have always thought of nachos as potatoe crisps that have lost their way, but perhaps I should re-evaluate things.
ReplyDeleteYep...they are nothing alike! If you like spicy Mexican food, then you must try them! And you know your favorite ale would be great along side!
DeleteHi Betsy .. often the best meal! A little of what you fancy ... cheers Hilary
ReplyDeleteyes..often the best and maybe never duplicated again! ha.
DeleteJames and I stopped at a little Mexican restaurant on our way home Sunday night and had something that looked quite similar and tasted very yummy. We shared a Fiesta Plate and both went home happy. And we decided that that driving east to the middle of nowhere got us a better Mexican restaurant than driving toward Rochester.
ReplyDeleteLove successful clean the fridge nights!
That might have to be a nice little tradition for the two of you! Sounds wonderful!
DeleteOh wow!! A meal out of another meal is always good! Yay! Take care
ReplyDeletex
yep...a kind of recycling, right? ha.
DeleteDid you know you could use Fritos if you do not have the tortilla chips, or if you have corn tortilla you can fry them up or even coat with some oil and bake them in the oven. Nachos can be a cheap meal too. Throw some refried beans or chili on top of the chips, some chopped onions, green chilies, cheddar cheese, heat in oven then top with chopped tomatoes, sour cream, sliced black olives, guacamole, and some more cheddar cheese and you have a great meal. And you can also add chopped steak, chicken strips, fish, or taco seasoned ground beef or turkey to it. Basically you can use any combination of,the above. Which you can also use in tacos, flour tortillas, and tostadas. Oh how much I love Mexican food, what can I say it is in my Mexican blood. I think we always have tortillas in the house. Breakfast burritos are also so good. And fresh tamales, oh yeah!!
ReplyDeleteAnd because you like avocados you might like them this way. Take a ripe avocado, peel it, mash it in a bowl, heat a flour tortilla then spread the avocado onto the tortilla, salt to taste (I like a decent amount), fold it in half and then chow down. I sometimes add cottage cheese to make it healthier but not often. Anyone who likes avocados that sees you eating this will want you to share but you are lucky if no one likes avocados there. Now I have to buy some avocados. I love avocados.
And your nacho picture is great, please thank the Mister so we were able to see it.
God bless.
Oh, I love it, too! It's what I craved while pregnant with Taylor and he loves it as much as me! haha. I'll have to try your avocado 'sandwich'...yum! And yes, I agree the best part is how versatile nachos are...really just anything you have...and the more toppings the better! I'm hungry now just thinking about it!
DeleteThis looks delicious, Betsy! I have been eating lots of avocados lately as they have been only $1 a piece.
