Tuna Cakes


Today I said on my Happening Now in the sidebar section that
I was making tuna cakes for dinner.
Mr. or Miss Anonymous (whoever you are!) asked if I would
post a recipe.  So..here we go! 
They are like crab cakes, except made with tuna.

I don't really have a recipe but I'll tell you how I do it
 Amounts are just a guess since I just throw them together.

Tuna Cakes

4 cans of white albacore tuna in water
1 egg, beaten
salt and pepper
garlic powder
onion powder
a drizzle of olive oil
several handfuls of seasoned bread crumbs
panko bread crumbs for a coating

Drain the cans of tuna and mix together with all
the ingredients except the panko.
Form into patties.  I made 6 patties from this amount.
Press both sides into some of the panko bread crumbs
and lay into skillet.  Skillet should be preheated to medium
high heat and have a little butter and olive oil in it.
Brown well on the bottom, then carefully turn with a
spatula and brown the other side.

Serve with tarter sauce.
(I just mix mayo, sweet pickle relish and cocktail sauce)

Tonight I served these with Oven Roasted Brussel Sprouts

  5. Dani is at the Eden Spa getting what she said was a very needed pedicure and manicure. So while she getting pretty fingers and toes, I ran a couple of errands, picked up a perscription and now visit or two before I start dinner for us. I love tuna burgers, and make mine like yours. Tonight we're having crusted Talipia, sweet potatoes and brocolli. Made another batch of scones this morning, and most are wrapped and in the freezer.

      You know, tuna cakes would make a really yummy sandwich...just need a bun, tomato and lettuce!

    Perhaps I should...they look very tasty!
    Did you get a picture of the robins today??

  11. Around here we call them patties if they're made out of tuna, or croquettes if they're made out of salmon. Why? Don't know :-)
