Homemade Salsa


The garden gave me a huge basket of tomatoes, peppers and
jalapenos so I just had to make salsa, right?


I canned using the 'green' method.  No pressure canner, no boiling water,
no hot kitchen!  Just put piping hot salsa into hot sterilized jars (I run
them through the dishwasher on extra hot).  Put on the lids and turn them
upside down.  The heat seals the lids.  Do not disturb for 8 hours.
Yes, it really works just as well as the old way!



I add the salsa to the jars using a slotted spoon so I have all the
liquid left over to make Tortilla Soup. Just add veggies and chicken.
Serve, topped with tortilla chips, shredded cheese and sour cream.
Hot, spicy and delicious!

The salsa recipe changes a bit every year, but it's basically this ~

8 cups tomatoes, chopped
(I do not peel or seed them)
4 c raw sweet corn
4 c green peppers (or any color)
6 medium jalapenos, seeded & minced
3 c sweet onion, chopped
4 cloves garlic, crushed
1/4 c cider vinegar
1 T salt
1 1/2 c sugar
1 T chili powder


This year I added cilantro and cumin.

Yum.

  1. Oh Betsy, you are so ready for FALL. I can smell it all the way to California!!! After making the Black Berry Jam in Oregon...I totally in a canning mood. Your salsa is so pretty in the jars..I would set our a jar to just look pretty on my counter.

    3. I think the fresh corn is the key to such a beautiful aray of colors. Today my friend at Church gave me a jar of spiced nectarine butter she had made. Wow was it good. She's experimenting with fruit and veggies this year. Glad I get to be one of the "testers"...

    5. Funny you said that, because when her mom tasted it, she said "It just tastes like "Fall" in my mouth. She said it even tasted good on vanilla ice cream. I got my Fall decorations up in the kitchen and living room. Only thing I haven't found is my Pumpkin Soup Tureen. Keep digging in the garage next week.

    2. Hey, guess what? I had this big bowl of tomatoes on the kitchen counter attracting fruit flies. So, I decided to make salsa today instead of tomorrow. Then I set out your little trick of the piece of banana in a glass with the saran wrap. :) Hopefully by tomorrow they will all enter the banana bar. lol...

    3. haha...I KNOW! Geesh! This friend I haven't met for lunch in a year! She's a labor and delivery nurse and works nights...and our schedules are complete opposites! Tomorrow works, though, so we are doing it. :)

  9. Fresh salsa is THE best! Yours look wonderful. I froze several batches this year myself. Never tried the green method of canning, but it sounds like my kind of canning for sure!

  16. The salsa jars are so festive looking! I see so many blogs canning fruit but this is the first I have seen salsa! I recently made a Tortilla Soup and just loved the flavors. I am in love with cilantro this summer. I love the smell, flavor, appearance. Enjoy your future salsa opening...hope you have some yummy chips!

    1. I've only canned fruit once....freestone white peach halves. They were beautiful and so tasty. I haven't come across a bushel of peaches that looked quite like that since. But I sure enjoyed the row of jars on my shelf that year!

      The soup is great...and I love cilantro, too! Yum. It's gotten to wear we say...mom's making salse! Oh, good...we'll have tortilla soup! haha.

  24. I've got to try this with my last tomatoes from summer! We've been eating them fresh every night but I need to have some of this salsa in my cupboard. Love the green canning method - I've used it too and it does work!

  26. Hi Betsy, just found your recipe. This looks delicious! How long do you cook your salsa before you put it in the jars?

    I love the "green" canning method. I've been doing that for years. So much easier.

    1. I just made sure it's come up to a good boil then immediately put it into hot jars. I hope you try it. Isn't that green canning method the best? Love that...what a change from the old days!
