Zucchini Bread Varieties



With an abundance of zucchini from the garden, I spent a couple
of days baking bread.  I love to pull a loaf out during the winter
to round out a meal or toast for breakfast.
And I had fun making new flavors, just adding what I had
on hand to my basic recipe.


I added a topping of chocolate chips and pecans to one.
Another got fresh pineapple, coconut and sliced almonds.
And some extra dark Hershey's cocoa made rich chocolate loaves.


I topped a plain loaf with extra lemony frosting.
And I think my favorite was the lemon zest and blueberry one
with a lemon glaze that soaked clear through.


The house smelled wonderful.
  I used up 20 cups of grated zucchini!


And we enjoyed sampling all the different kinds before
the were put in the freezer.  Yum!

Zucchini Bread

2 1/4 c sugar
1 c vegetable oil
3 eggs
3 t vanilla
1/2 t salt
1/4 t baking powder
1 t baking soda
3 t cinnamon
3 c flour
3 c shredded zucchini

Whisk eggs, oil and sugar.  Add the remaining ingredients and
stir with spatula until combined.
Bake in a greased tube pan or 2 large loaf pans.
Or one large and three small loaf pans.
Takes about 60 minutes.  Toothpick test.
30 minutes for small loaf pans.

Lemon Blueberry Zucchini Bread

I omitted the cinnamon and added 2 T lemon juice,
the zest of one lemon and 2 c blueberries.
After baking and still hot in the pan, I poured over a mixture
of lemon juice and powdered sugar.  Make it thin to soak 
into the bread...not thick like a drizzle.

Chocolate Zucchini Bread

I omitted the cinnamon and added 1/3 Hershey's Extra Dark Cocoa.

 Zucchini Bread With Toffee Chip Streusel

I omitted the cinnamon and added 1/2 bag of Heath Toffee Bits
and 1 c chopped pecans.  Most went in the center of the batter like a
streusel with a little left for sprinkling on top.

Chocolate Chip Zucchini Bread

I added 1 cup semi sweet chocolate chips and 1 c chopped pecans
mixed with a little brown sugar.  Add in the batter with some sprinkled
on top, too.

Pineapple Coconut Zucchini Bread

I omitted the cinnamon and added 1 c chopped fresh pineapple,
1 c coconut, 1/2 t coconut extract and 1 c sliced almonds.
Reserve a few almonds to sprinkle on top.

The next round of zucchini will be savory instead of sweet
because we love it that way, too!

    Can tell just from looking
    Bread I like
    Before the food took a hike
    As long as it's toasty
    But not too roasty
    All mushy never works for me
    And the chocolate has to be avoided at my sea
    At least for the most part
    Looks great though and hopefully will be able to eat once more at my cart

      They have so many uses
      even for those who are clueless.

  11. What wonderful varieties of zucchini bread, Betsy! My mouth is watering looking at them all. I know I'd really love the chocolate and the lemon blueberry loafs. We passed through Ohio on our way back home yesterday -- did you see me waving?

    2. Yes...lol! Thank goodness Ohio is one of the narrow states on route 80, unlike Nebraska, Iowa and Pennsylvania! Those states never seemed to end. I took more beautiful drive by barn photos --one had an outline of Ohio on one wall and the words "Bicentennial 1803 -2003! Glad I saw that one!

  15. I have never had Zucchini Bread. But if it toasts, then I will love it, for wouldn't you agree that toast is the real food of the Gods.

  18. Well, you've been a busy lady. Very inspirational.
    I really need to make that brown bread I keep thinking about. I'd be ashamed to admit how long it's been on the back burner waiting for me. Probably the yeast will expire before I get around to it.

    The last block of photos - right top - the slice on the cherry plate, rings of banana bread to me.
    Is it actually made with Zucchini?
    Which reminds me, LOL, I have some bananas set out to make some jumbo muffins. (makes a note to self)

    1. Yes, it really is zucchini bread. If you look closely you can see the specks of green! Banana bread is yummy, too. Mmmmmm! Your house will smell wonderful today!

    2. Yes, I do have a lemon tree...but more of a bush actually, and it's not very productive. I didn't get the bread made today, thought I had the best of intentions. Tomorrow. My favorite word.

  21. Oh I love all the variations.....Wish I was your neighbor..I would take a few of those zucchini off your hands...I told Don...we need to clean out a strip of side yard we have that is just full of this and that and junk, and I should plant a small garden...maybe in Spring we'll do that.

    So far my best variation is the mango banana bread...it really turned out good. I'm sure going to try several of yours now.

    Took a look at your Esty Shop...really nice ~ I'm looking at those necklaces....yep!!

  25. Hi Betsy,

    All of them look so delicious that I would have a hard time deciding. I once looked up to see what a courgette is and it is just what they call zucchini in some other countries. I think it is in England and Austrailia for sure. I am not sure about Canada because my hubby and his family always call it zucchini and so I figure they do speak more like us, eh.
    But one way his Mom taught me to make the zucchini was to just shred it up and then sauté it in some butter until just softened (otherwise it becomes a soggy mess), add a sprinkle of salt and serve it as a side veggie dish. I like it with rice as the starch. It is pretty good and healthy.

  26. Went to shop, my question is that if I buy some things can I hold off on the shipping because I think there will be more I will buy as you increase your items and I can just have them shipped together. Would that be too difficult?

    1. If the time span is reasonable, I don't mind. But I don't know if Etsy requires you to pay within a certain time period. If smaller items can be added to a package and not increase the weight, I won't charge more shipping costs.

    1. I do have them at my house. :) You won't save me shipping, because you are the one that pays for that. But combining items to ship at once will save you money. Either way is fine with me. I don't make a profit on the shipping.
