Lemon and Honey Chicken


I made this for dinner last night and had the presence of mind to make
double so we could eat it again as leftovers tonight! :)
So easy on the cook that way, you know!
Lemon, honey, garlic and oregano give this a wonderfully
summery flavor.  We will be having this again.
And I'm thinking extra would make great sandwiches or chicken salad, too!


I adapted the recipe from Marie at The English Kitchen.  

Lemon and Honey Chicken

4 chicken breasts with bone and skin
the zest and juice from one lemon
1/4 c honey
2 T olive oil
2 cloves garlic, crushed
1 t salt
2 t dried oregano
1 t corn starch with 2 T water


Place chicken pieces (any cuts would be yummy) skin side down in a
 greased pan.  Whisk remaining ingredients except the corn
 starch/water in a glass measuring cup and microwave a few
 seconds to help incorporate the honey.
  Pour over chicken and bake 375 for 30 minutes,
 turning to skin side up for the second half of the baking time,
 spooning the sauce over the pieces. 
 Bake 45 minutes for larger pieces.  
Be careful not to over bake or your chicken will be dry.  
I turned on the broiler for the last 5 minutes to brown and crisp 
up the skin.  When cooked through, transfer chicken to a serving platter. 
 Whisk the corn starch and water into the sauce and cook a little on
 the stove top until bubbly and thickened.  Spoon over chicken.

    1. Sometimes I use orange juice in chicken but I love the idea of lemon and honey because the honey tasty nice and make look like caramel LOL

  9. Oh that Chicken looks yummy. I'm doing my recipe of Chicken Thighs for our Father's Day BBQ. I take the skin off, and sprinkle with garlic powder, sea salt, and Montreal Steak seasoning on both sides, and brown in a large skillet with olive oil. Then pour BBQ sauce and make sure they all have some, and transfer into my large crockpot and cook slow for several hours. Fall off the bone good!!! Making cold slaw, and a new Baked bean recipe. What are you doing for Father's Day??

    1. oh my....I love that whole meal..bbq, slaw and beans. Perfect!

      Sunday having seafood pasta salad...one of The Mister's favorites...and chocolate upside down cake. He needs new shoes, so he and I are escaping Saturday night out for dinner/shopping. Taylor's sweet enough to watch his brothers for us. :)

      Next grocery trip, I'm getting chicken thighs so I can try your recipe!
