Light and Fluffy Dinner Rolls

I tweaked an old roll recipe of mine and came up with these for Taylor's birthday.
They are really easy, melt in your mouth and freeze well!
Light and Fluffy Rolls
2.5 c hot tap water
1 c sugar
3 pkgs of yeast
1 c butter, melted and slightly cooled
4 t salt
10.5 t baking powder (1/4 c)
7.5 c all purpose flour
In electric mixer, combine water, sugar and yeast. Mix on low
and let sit a few minutes until yeast is dissolved and foamy.
On low speed, gradually add butter and salt.
Then add baking powder and flour until combined.
Dough is wet and very sticky. Scrape down sides of bowl, cover
with a damp dish towel and let rise in a warm place for 1.5 hours.
Punch down and knead with 1/2 to 1 cup of flour.
Divide into 24 equal portions. Shape into rolls and place in three
8" round, greased cake pans, 8 rolls each.
Rise 30 minutes.
Bake 350 degrees for 25 minutes.

And if you're like me, you must sample while still warm,
slathered with real butter! Mmmmm!

    hey betsy...i see your little kitty there...mustache...cute name btw...i had a kitty...a ragdoll.... that had a mustcache EXACTLY like that...that's why we picked him...we named him Oliver but called him The Goose...man...john and i ADORED that cat so MUCH !!!!!

  18. Jenn ~ us, too! I froze one pan but thawed it as soon as the other two were gone! ha. We were eating them for breakfast with homemade preserves on them, in addition to having them with dinner. yum.

    These look very yummy. I am just wondering if one can make these with a bread machine. I have been looking for a good roll recipe to use in it.

    Just looking at the picture is making me want one so much. And it is funny that I was just thinking the other day that I need to find a good roll recipe.

    Do you know of a good easy recipe for cherry scones or any scones? I seem to have such a hard time with scones, might as well call them bricks.

  23. They look absolutely delicious, but I am baffled as to what the measurement 'c' equates to?

    Over here in the Mother Country we use grams, kilograms and sometimes the old imperial system, i.e., ounces, lbs etc., but that is now frowned upon by the EU.

    3 packets of yeast? Have you seen the SIZE of a packet of yeast here?

  24. MrsU ~ There really isn't a lot of kneading in this, so I don't know about a bread machine. This is so quick and easy, just use your mixer!

    I've never made scones! If you find a good recipe, let me know. In fact, I've beem meaning to ask my Brit friend Jo for one. She surely would know about scones, don't you think? :)

  25. Keith ~ c is for cup, which is 8 ounces. :)

    A packet of yeast contains 2.5 teaspoons. I usually buy a jar of yeast, but you can buy packets that are premeasured like that.

    Sorry to confuse you. You Brits do the same for me with your grams. haha
