Coconut Key Lime Bars

Recipe



1 c sweet, flaked coconut

1 1/2 c flour

1/2 c powdered sugar

10 T cold butter

6 egg yolks

2 cans sweetened condensed milk

1 c lime juice

4 t lime zest

Preheat oven to 350. Toast coconut 6-8 minutes until golden. Combine flour and sugar. Add 1/2 coconut and cut in the butter. (I used my food processor.) Press into bottom of a greased 9x13 pan. Bake 25 minutes. Meanwhile, whisk yolks and milk together. Gradually whisk in juice and zest. Pour over crust. Sprinkle with remaining coconut. Bake 8-10 minutes. Cool completely, then chill in refrigerator. Decorated with additional zest and powdered sugar if desired.

    And speaking of wow, did you draw that picture on your masthead? She looks like you but I don't see you signature anywhere so suspect not. Love the image, even if your grocery shopping would surely be about 5 times more, right? :)

  28. Oh my goodness...my sugar-deprived diabetic heart is just drooling! These look delicious. I'm a firm believer though that nothing - I mean nothing - tastes bad that is made with sweetened condensed milk. :)
