1 c sweet, flaked coconut
1 1/2 c flour
1/2 c powdered sugar
10 T cold butter
6 egg yolks
2 cans sweetened condensed milk
1 c lime juice
4 t lime zest
*****
Preheat oven to 350. Toast coconut 6-8 minutes until golden. Combine flour and sugar. Add 1/2 coconut and cut in the butter. (I used my food processor.) Press into bottom of a greased 9x13 pan. Bake 25 minutes. Meanwhile, whisk yolks and milk together. Gradually whisk in juice and zest. Pour over crust. Sprinkle with remaining coconut. Bake 8-10 minutes. Cool completely, then chill in refrigerator. Decorated with additional zest and powdered sugar if desired.

Kary ~ they are yummy! Sorry you had to view it before I was done arguing with blogger over my margins and fonts. ha. Geesh! Why can't it just post how I type it??

ReplyDeleteHey, Otin!
ReplyDeleteCome have a piece...I'll pour the coffee!
I've missed you, my friend. :)
Hey Betsy - you can be sure...if I lived closer, I'd be over for a cookie and coffee!!! Sounds like an awesome recipe - love your adorable new header too!
ReplyDeleteOh now you steal recipes from the jail bird
ReplyDeletehaha had to add that to my little comment word
But hey it's no wonder as you like birds
Having a couple dozen herds
Must make you two get along great
Just don't fall for the financial tip bait
Stick to the recipes that are oh so yum
I say that with a sarcastic hum
Guess my niceness has been drained dry
Hey at least I gave it a try
Or we can pretend I did
Now it's time to close the lid
And but the recipe in the fridge shutting the door
As I hate the food tour...lol
Pat ~
ReplyDeleteHa. Sorry to make you look at such stuff
Hope it didn't make your stomach feel too rough
No, I won't take stock tips from the Decor Queen
Just her recipes and decorating keen.
Mmmm this looks delicious. :)
ReplyDeleteOK, that operas singer girl has left me in teras. A voice of an angel indeed. Wow.
ReplyDeleteAnd speaking of wow, did you draw that picture on your masthead? She looks like you but I don't see you signature anywhere so suspect not. Love the image, even if your grocery shopping would surely be about 5 times more, right? :)
I hope the Mister had a most marvelous day. Tell him, happy Fathers Day from me. :) I'm sure you made it very special.
OK, long time no hear or see from me. I shall have to peruse a few of your other pots. Lots to catch up on.
Nice recipe! I love lemon and/or lime cookie bars.
ReplyDeleteWhy am I not at your house eating these right now? :)
ReplyDeleteBug ~ that is a very good question! Gosh, you could be here in, what? 12 minutes? ha.
ReplyDeleteMmm ~ love her voice, too! In fact, I've listened to all of her youtube clips over the last few days.
ReplyDeleteYes, I drew myself and inserted it into a drawing of Susan Branch. So, partly my art and partly hers. :) Glad you recognized me! ha.
Oh, that one looks amazing AND refreshing!
ReplyDeleteHappy Father's Day to The Mister!
If people are coming over, I can be there in a few days.
ReplyDeleteI'm sure the Bars will be gone, before I arrive.

ReplyDeleteOh my. I just came to see what you were doing and smiled at the seedlings sprouting and made the mistake of scrolling a bit more and there was temptation staring at me. Bad girl.
ReplyDeleteLooks so moist, creamy, coconutty and yummy! I bet it's delicious which probably explains why I'm drooling over my keyboard :D
ReplyDeleteOh my goodness...my sugar-deprived diabetic heart is just drooling! These look delicious. I'm a firm believer though that nothing - I mean nothing - tastes bad that is made with sweetened condensed milk. :)
