then you'll like this recipe! It tastes very similar!
Chipotle Rice
2 c of white long grain rice
(I used jasmine rice).
2 bay leaves
2 t vegetable oil
3/4 t salt
juice of 1 lime
1/2 c fresh chopped cilantro
******
Steam rice as you normally would, adding
the bay leaves. When done, add
remaining ingredients and mix well. Taste and
adjust seasonings if necessary. Serve immediately.
I served this with grilled chicken seasoned with
chili powder and cumin. Yum. :)
oh excellent...we love chipotle...but we have to travel an hour to get it...this might bring it closer to home...

Cilantro added to anything makes it my favorite recipe....this looks so good! I love jasmine rice!

ReplyDeletehavent been able to eat any Mexican flavored food in years and miss it terribly..I have colitis and there is something in the seasoning that does not agree with my stomach.. but i have to live vicariously through my family and friends as they enjoy it.
The rice recipe sounds good. One of these restaurants just opened here last year near where I worked. I had burritos a couple of times, but went with a friend a few weeks ago and had tacos. I've wanted more ever since then.
