Current Favorite Veggies

Besides sweet corn, we have been enjoying these veggies that are
in season! Even Alex has been enjoying it!
I saute onion and garlic in olive oil.
Add chopped zucchini. When tender-crisp, add chopped tomato,
salt, pepper, and Italian Seasoning. Heat through and top
with shredded Parmesan. Very fast....very yummy.

  2. oh this does look yummy! i'm going to try it tomorrow night. i have my first 2 tomatoes off my volunteer plants and my son gave me some huge zucchini!! thanks for sharing, betsy!

  9. I love zucchini; they are unfortunately not as common here, or are rather expensive. We have other kind of "pumpkins", but they are not as good.;)
    The picture truly looks yummy.;)

  11. You know, I did something sort of like this a long time ago in the oven with zucchini, squash, and roma tomato, but the tomato gets a little squishy. I think I like this better because it will cook a lot faster the tomato will not get squishy since you add it at the end. I'm definitely going to try this, hopefully this week!

  16. Nanny ~ here's the steps stop following a blog..
    --go to your dashboard
    --see your followers list on the left
    --click on blue box "manage"
    --choose the blog
    --choose 'stop following this site'
    --then I think it asks you to verify your decision.

    Looks like the followers link is down at the moment. Maybe Blogger is having a problem.
