Black Bean Salad

The cumin and cilantro give this salad a delicious southwest
flavor. It goes great with any grilled meat or sandwiches.
I have to give credit to my sister..it is originally her recipe. :)
Black Bean Salad
1 cucumber
2 tomatoes
1/2 sweet onion
3 ears fresh corn
2 cans black beans, rinsed
1/2 bunch cilantro, chopped

Chop all in even 1/2 " squares. Add dressing. Chill 4 hours.

Dressing
1/2 c olive oil
1/2 c lime juice
1 clove garlic, chopped
1 t basil (I used 3 fresh leaves)
2 t cumin
1 t salt

  12. I had to look up what cilantro is in Google ~ it's called "coriander" over here in the UK.

  14. After the food in my food success in my home that included both beans AND corn like this, I might have to give this a whirl. Don't drop over out of your chair, Betsy.

    I had to crack up though...chop in even 1/2" squares...should I measure? Why would you put that in there knowing I'm going to read this? I know, you thought there was no chance I'd ever make it, right?!

  17. Justin ~ we call the plant leaves cilantro and the seed (usually ground into a powdered spice) coriander..which I love, too, but it tastes completely different.

  20. I never realized ho easy it is to cut fresh corn off the cob. It's so worth it. This looks like a variation of a recipe my mother had for 5 bean salad, a Midwestern recipe. You do not, however, have sugar.
