Buttermilk Pancakes

This recipe is an "after Sunday morning church" favorite.
Just add bacon, eggs and fruit and you have a delicious brunch.
I serve them with my homemade hot syrup.
Buttermilk Pancakes
2 eggs
1 c buttermilk
3 T vegetable oil
1 T sugar
1 1/4 c flour
1 t baking powder
1/2 t baking soda
1/2 t salt
Whisk all ingredients together until thick and smooth.
Bake on griddle as with any pancakes.
Makes seven 4" pancakes.

  10. Yum! These look so good, and I'm embarrassed to say I don't think I've ever made pancakes "from scratch". Don't look too hard though ... I will have to try :)

  13. I make homemade pancakes, too, straight out of my Betty Crocker cookbook I've had since I got married. They are similar to your recipe. Love them! But when I've run out of syrup I've thrown some together but it's runny...I didn't actually have a recipe...I just threw equal parts of sugar, brown sugar, and water together. So I was thrilled to see your homemade syrup recipe. Printed it off immediately and plan to try it soon. What I want to know is, if there is any left, or if I want to make some to keep in the fridge for frozen waffles, how does it keep?

  17. We make pancakes on Sunday too! I just bought little pancake star molds at Williams Sonoma on sale that make the cutest star shaped stacks that can be filled in the middle with fruit! A future blog post :-)

  18. Looks really yummy. I make my own pancakes from scratch, but they aren't Buttermilk. Sometimes I make them look like little feet for the grandkids.
