Carmel Corn

You guessed it...a holiday family favorite!

6 qts popped corn (24 cups)
2 sticks butter
2 c brown sugar
1/2 c light corn syrup
1 t salt
1 t vanilla extract
3/4 t baking soda

In saucepan, melt butter. Stir in brown sugar, corn syrup
and salt. Bring to boil, stirring constantly. Remove from heat.
Add vanilla and baking soda and stir to combine.
Pour over popped corn which should be in an extra
large, greased bowl. Mix until completely coated.
Turn into large, greased pan. Bake at 250 for 1 hour,
stirring every 15 minutes.

  4. After just having had a shake, I think I am done for for sugar in quite a while. Otherwise, this would seem more appealing. I think I was a down home , simple carrot to much tomorrow! :)

  10. I turned on my computer, and the smell of carmel corn wafted over from your place! I love the recipe - it fits with all of my New Years resolutions: 2 cups butter - check, 2 cups sugar - check - 6, count 'em SIX quarts popcorn. Hand that bowl over here, please!

  11. This brings back memories! I used to make this recipe a lot back in the 80's when the kids were small. I haven't made it in at least 20 years. It's making my mouth water!

  14. Looks delicious. Sounds a lot like the one our one daughter makes, except hers goes into a large brown sack and then into the oven. It's delicious.

  15. Betsy, I made your Chicken Minestrone Soup (of postcard fame!) tonight and it was excellent. I was a bit leery of 1/2 cup of ketchup going into the soup pot but I did it and now I'm convinced that it's a key ingredient in the soup... a hint of sweet and "just enough" tomato-y flavor. I was especially thrilled to see both of my boys slurp up this soup. Neither one of them are too keen on seeing veggies floating in their soup bowls but there were no complaints tonight.

    Thanks for sharing this recipe. What could be easier than tossing it all in the pot to simmer?!

  19. How dare you share this when I am about to get on my Wii Fit :)LOL! Absolutely divine. I was just thinking about this the other day. My mom would make caramel popcorn for us when we were growing up, but I don't have a recipe to make some for my own. This is great.

    I am going to make some next weekend.....shhh, I'll start my resolution afterwards LOL!
