Pan Fried Catfish

As promised...here's that yummy catfish recipe....
Marinade: spices (onion powder, salt, pepper, steak seasoning, paprika)
combined to equal 1 Tablespoon in total,
1/4 c lemon juice, 1 Tablespoon minced garlic, 1 T parsley.
Breading: 3/4 c yellow cornmeal, 1/2 c Panko bread crumbs (do not substitute),
1/4 c flour,1 t salt.
Set up assembly line of 4 pie plates: 1. marinade 2. plain flour 3. beaten egg 4. breading
Marinade fish for 10 minutes...5 minutes each side. Take fillets through assembly line.
Can rest on cookie sheet until ready to fry at this point.

Heat 1 c plain oil in skillet over med. high heat.
Fry 3-4 minutes per side. Drain on paper towel. Serve immediately.

  2. this looks good,...but I am like mod girl....I don't care for catfish either. I LOVE lots of other fish though.....but usually just grill or bake it. I would like to try this sometime on something though!

  3. I didn't think I would like catfish until I tried it. Catfish is so mild and non-fishy! But..I'm sure this recipe would work on any flakey white fish.

  12. First, where can I find the Vanilla Macadamia Nut Coffee you're drinking right now?

    Second, we are HUGE fried catfish lovers. Coming from North Arkansas, there are restaurants with Catfish in the names. Hubby is our fried catfish cooker, and although it smells up the house something awful, I still love to eat it and will sacrifice the house for it. I will when I get my house anyway. :) He has always just used plain old salt and cornmeal, so I'm going to print this recipe for him to try something new. It sounds delicious.

    I was serious about wanting to know where you got your coffee. I usually have hazelnut...it's my standard, but that one sounds really good.

    I'm having a sad day too.

  13. Kayren~ this coffee is from Sam's Club. It's Hawaiian Brand and they sell several flavors. This one is really yummy! And being a large bag of beans from a warehouse club, it takes me a few weeks to finish the whole thing! I love hazelnut, too! :)

    Let me know if your husband fries up this fish recipe! :) I know what you mean about the house...ha-ha!

  14. Thanks, Betsy. That's funny...I usually buy Millstone hazelnut, but we bought the big bag of Hawaiian hazelnut at Sam's Club just last week. I didn't see this flavor. I'm going to have to check again. Maybe I just had my blinders on.

  15. Kayren ~ My standard coffee is Millstone hazelnut! How about that. It's such a good price at Sams, it's hard to buy anything else! The last 2 times I've bought coffee, it's been this Hawaiian macadamia...really tasty and a nice change. :)
