Last of the Tomatoes

A few more jars of salsa canned today.
My recipe can be found here.
I added two cans of black beans along with the sweet
corn for this batch...so yummy!
And I tried the "green" way to can, which I found
here from Sandy of 4 Reluctant Entertainers.
This is soooo great...no canner needed, no pressure,
no water bath....all you do is make sure everything is
boiling hot and sterile. Put the lids on tight and turn
jars upside down. Wait 1 hour for the hot food to 'seal'
the lids! That's it! I'm so glad to have this wonderful
canning tip! Talk about easy and fast! Thank you, Sandy!
I plan on making crabapple jelly later this week and
this method is going to make it a breeze!

  6. I love homemade salsa. I'm going to have to try this next summer. I need to learn to can anyway. I've only done it once, as an adult, and it was jelly with help from my mom. We did it the hard way, boiling the jars until they sealed, and at some point putting parafin wax on top. I could never do it by myself. Your green way looks so simple! I could even do that. Wish I could shop in your pantry...

  7. You are very talented. Someday take a picture of your pantry. I'll bet it is so organized and colorful. The salsa looks great. I just had some black beans and cheese tonight. That is going to be yummy with some big corn chips.

    My grand daughter stays with two teenager brothers who are autistic, so I have an idea of what a busy Mom you are. I can tell from your writings that you are a great one.

  10. I sometimes wish I could cook like this. That looks delicious. we have a greenhouse full of tomatoes and I can't eat them because of heartburn!

  13. Pinkdaisy ~ so you've done canning the old fashioned way! That's the way I've always done it...it's fun, but it's a big production and if you are doing a big batch of something it takes all day,.. the canner running on the stove heats up the entire house, etc, etc,. I can't believe this method...it's just amazing!

    I'll check out the "un-canning" method. I've always wanted to learn to do canning but I'm too freaked out about bacteria. I know it can be done safely I just need some lessons! My mother-in-law always cans the greatest jams and jellies. Maybe someday I'll live near enough to her to learn.

  22. yummy!! and the new method sounds like a huge improvement over the old way. i spent many,many hours helping my grandma farmer can back when i was young (I started to say back in the old days. yikes!!).

  23. Your salsa looks so good! I love the combination of black beans corn and tomatos.

    I've made tomato sauce the "green way" and it is a lot easier than the water bath, etc. I've never had a problem with a vacuum forming. I wonder why more people don't use that method?
