Crust:
1 cup flour
1/4 teaspoon baking powder
4 tablespoons unsalted butter, room temperature
1/3 cup light brown sugar
1/4 cup finely chopped pecans

In a small bowl, whisk together flour and baking powder. Set aside.
In your mixer, beat the butter and brown sugar until fluffy.
Beat in the flour mixture until the mixture resembles
coarse meal (do not over beat).
Stir in the finely chopped pecans.
This mixture will be like crumbs, it will not be a cohesive dough.
Press the mixture into the prepared 9x9" pan and bake
for about 10 minutes or until very lightly browned.
Remove from oven and place on a wire rack
to cool while you make the filling.

Pecan Filling:
2 large eggs
1/4 cup light brown sugar
3/4 cup dark corn syrup
2 tablespoons flour
1/4 teaspoon salt
1 teaspoon pure vanilla extract
3/4 cup chopped pecans

In a large bowl whisk the eggs until foamy. Add the brown sugar,
corn syrup, flour, salt, and vanilla extract and whisk until combined.
Pour over the baked crust and then
sprinkle with the chopped pecans. Bake at 350
for about 25 - 30 minutes or until firm and nicely browned.
Let cool in the pan and then cut into squares.
Store at room temperature or in the refrigerator.
I used an 8x8 pan and baked 10 minutes longer.
Very, very yummy!
I haven't made these in years. They look DEE-lish (with a capital DEE). I could polish off a couple of those with a glass of milk right now.

ReplyDeleteI figured I was the one having the pecan pie cravings...and I was the one who baked them...so I did indeed deserved to be indulged! ha-ha (it was a very small pan, afterall!)
Betsy...those look heavenly dahlin!.... I do fear they just might end up on my southern belle thighs, should I choose to partake of them :) I'm with Willow...I could really polish off a few with a large glass of milk..
ReplyDeleteDeedee ~ I had to laugh at the recipe...a 9x9 dish and it said that it made 24 squares! Well, not in this family....it was only 12! :)
ReplyDeleteYummy! I love pecans, but the only way I can eat them now is to crush some and mix them into my breakfast cereal....darn diet!
