Couscous Salad

Using 1 c couscous and 1 c water,
prepare as directed on the box.
Then add chopped veggies ~
I used red peppers, cucumbers,
sweet onion, fresh thyme and basil.
Stir in dressing and chill.

Dressing
1/2 c sugar
1/2 c vinegar
1/2 c vegetable oil
1 t salt
2 t dried parsley
1/2 t dry mustard
1/2 t dried basil

Whisk together

  1. I love couscous and this sounds and looks amazing..I'm copying and pasting this to my recipe files...Is it a woman thing that this would be more than satisfying as a complete meal in itself? LOL!!

  2. Thanks Rebecca! I had never had couscous until about a year ago when a friend told me about it. This is our favorite way of eating it...yummy salad that goes with anything. Yes, I could eat it all by itself, too! :)

  8. I love couscous, but almost never make it (which is silly because it is so easy!). Thanks for the recipe. If Tukes eats it the same way he eats rice there will be couscous everywhere!
