"green method". No canner, no pressure, no hot kitchen ~
just filled piping hot jars with hot food. Put on the lids
and turn upside down. The heat creates the seal.

And ~ did you know you can get jalapeno skin burns?
After mincing 1 cup of jalapenos my fingers felt like they
were on fire! I had used thin latex gloves in the past,
but thought I could get away with washing my hands
several times during the mincing process. Well,
that doesn't work. The burning lasts about 24 hours ~
kinda tough to sleep that way!
I looked online for a home remedy and didn't really find
one. The only words of wisdom were that you shouldn't
touch any ...ahem...delicate parts of your body while your
fingers are burning! (wonder how they found that out!)
And I do believe them as my eyes burnt when I put my
contacts in even the next morning!
But all is well now and we've already enjoyed a jar...with
tortilla chips and then tucked in an omelette with cheddar
for brunch. Yum, Yum!
It looks so good! I've never heard of that canning method either.

I was doing a cooking class one day at a Thai restaurant and was told to be careful chopping the chillis, even though I had washed my hands when I touched my lips I felt like it must be when given collagen...

ReplyDeleteNothing is so pretty as jars of canned food. My mother was a pro, and as a little girl I loved to look at the rows of peaches, corn, beans etc. My Dad cured olives and they looked great in the jars too.

Hi Betsy....I had to comment on this ....so reminds me of the time I made Hot Chow Chow....very large amount and the only way to mix it thoroughly(I thought) was to use my hands. Not a good idea....even after plunging my hands into ice water they still burned. Live and learn...I never did that again...Blessings Dee Dee
ReplyDeleteDelwyn ~ I usually use a canner and did when I originally posted the recipe. But this time I did not...and won't ever again...it just isn't needed! Just make sure everything is boiling hot and sterile.

Hope they are MUCH better now...your back door neighbors (the elderly pair who lived by me) The Mister at their house used to grow all sorts of VERY HOT peppers...he would not only handle them but put WHOLE peppers with cold cuts on sandwich bread and EAT THEM! I have NO IDEA how he withstood the HEAT! I like a LITTLE heat but not like THAT!!!!

ReplyDeleteI have a friend who told me that she spent most of last summer perfecting a salsa recipe that her family of six loves. She said now she has the perfect recipe she just needs to can 52 jars of it because they love it so much they'll need a jar a week.

ReplyDeleteI haven't cooked with jalapenos since the first time I used one to make Mexican cornbread. I had a cut on my finger and ended up in mind-numbing pain. I tried everything under the sun to cool the burn but nothing worked. I eventually called my doc and he called in a prescription for powerful pain meds so I could sleep through it. It was terrible. He told me that he knew a lady who had taken a big whiff of jalapenos and ended up hospitalized because the "fumes" got into her lungs and "burned" them. That was enough to keep me from them for life! LOL!

How do you recommend I get the jars as hot as I need them? Boil, put in dishwasher on heat cycle, microwave? I would love to try this ... with cucumbered pickles. Do you think it would work?

ReplyDeleteHelen ~ yes, I just put mine in the dishwasher and put all the settings for the highest heat. I usually try to time my food with the end of the dishwasher cycle so everything is hot and ready at the same time. If your jars cool, just pour a tea kettle of boiling water on them before you fill.

Helen ~ and yes, I think it would work! Just check the seals when the jars are cool enough to handle. If you happen to have one that didn't seal, just stick it in the frig and use it up. But...I haven't had this happen...they all have sealed just fine!
