Winter Hash


This was one of those dishes I just made up out of what
we had in the fridge, but it turned out so tasty, The Mister said
I needed to give it a name and write it down so we
could have it again!

In a skillet I fried 1/2 package of thick sliced bacon, cut in 1" pieces.
Then I added to the bacon and drippings.....
 1/2 chopped onion and a Granny Smith apple,  (saute until tender)
2 large sweet potatoes (microwaved until cooked but still firm)
and 1 cup cranberries (they had been baked with some sugar
for Thanksgiving) and a sprinkle of salt.

Delish!

  3. That's a great idea. I'm going to make this. However, since I don't like sweet potatoes, I'm going to use new potatoes. Thanks for sharing your recipe!

    1. I'm not thinking that combo will go well together...you'll have to let me know. Apples and cranberries with white potatoes? hmmm.

    2. I tried your recipe, just with different ingredients. I didn't have anymore cranberries and I don't care for sweet potatoes. So, I sauteed the bacon and onions and added diced carrots and potatoes. Left out the apples, too. HaHa! I guess in the end, it really wasn't your recipe. It was really good, but with a much different taste than yours. Your recipe was a great idea.

  5. It sounds and looks like it satisfies all of the senses, eyes, taste, touch, smell and ... the hearing?! :-0 ... oh well, maybe the sound of it cooking ... :-) but in one word - perfect! And I like the name of it too ... winter hash!

  10. Hi Betsy - after a big dinner and then having the left-overs .. these sorts of meals are bliss - no wonder the Mister suggest you remember it! Still it's what's in the fridge isn't it ... I often add fruit to things .. cheers Hilary

    1. I do love leftovers....sometimes I purposefully make the meal extra big so I don't have to cook the next day!

  11. I'm serious! Have you thought of a cookbook? I'm using google calendar...well, trying to, so a calendar isn't really isn't for me anymore. But a cookbook, even an ebook, with your pictures I'd buy in a heartbeat. I like that you are a real ( superwoman) woman with kids and a husband. With some help,I might be able to cook better. Remember, I would buy one.

    1. I have never considered it, really. But you sound serious! haha.
      An ebook...not that might be something I'd be inclined to do!
      You CAN do this recipe...it's so easy and ready in 20 minutes.
      For a book I guess I'd have to get a little more precise in my
      measurements...I tend to toss things together, taste and adjust the
      seasonings. ha.

    2. I'm thinking about all those posts about what's for dinner with those beautiful pictures. I'm hoping others are like me...precise when needed, but " about" when possible. Isn't that the way we all live and cook? 2016 ? Please? I'd buy one for my daughter in law who over "boiled" the jello. In hindsight, the recipe was not very clear. (0;
