Old Fashioned Gingerbread

I had only had gingerbread once that I can remember and
it was years ago.  So when I made up my Winter Fun To Do List,
I thought it would be fun to try baking some for myself.
Last week I tried this recipe and it was exactly what
I was hoping for ~ spicy and moist!
I baked it in a 9" pan, but next time I think
I'd prefer it to be in a bread pan.


Gingerbread

1/2 c sugar
1/2 c butter, softened
1 egg
1 c unsulphured molasses
1 T vegetable oil
1/2 c apple sauce
2 1/2 c flour
2 t cinnamon
2 t ground ginger
1/2 t ground cloves
1/2 t salt
1 1/2 t baking soda
1 c hot water

With mixer, cream butter and sugar.  Add egg, molasses
oil and apple sauce and mix well.
In a separate bowl, whisk the flour and spices.
Dissolve baking soda in the hot water.
Add the dry ingredients to the mixer on low, alternating
with the water and mix well.

Bake in 9" prepared baking pan or bread pan
at 350 for 35-55 minutes.

Toothpick test.
Cool before cutting.
Serve with whipped cream.

  3. I remember my late mom making gingerbread when I was a child. I love it hot with a little butter melted on it.

  6. I like your recipe. I haven't made gingerbread in years. It's not my favorite...but the look of yours, and that applesauce makes me want to give it a try. I can always add more whipped cream to the top. I think butter might be good too. I love butter on coffee cake..right on top of that drizzle...teehee.

  7. I love gingerbread. It just might be one of my favorites although I don't make it often. I do, however, have a nice big jar of molasses in my cupboard. Maybe some will magically appear over the weekend.

    I miss the RAK this time around. Just couldn't get my act together. Instead of doing my own, I was noticing things others did for me. The woman behind me in Hobby Lobby who let me use her "smart phone" coupon to get 50% off the wool I bought, and my Aunt Margie who brought me a dry soup mix along with a bag of wheat crackers. She's really good at RAK's and has probably never heard of them.

    2. It wasn't that I didn't do anything nice, just didn't do anything noteworthy.
      I made drove to Auburn Thursday morning to get Joe and bring him home for the long weekend, I dosed my mom with cough medicine all week, made cookies for my family, and took Hannah all the way to Honeoye for L.'s court date on Wednesday. An hour to Honeoye, an hour to Auburn, and then back home again too. It's got to count for something, but it's all part of being a mom, isn't it?

    the crisp cookie with a bite...mmm...
    gingerbread is nice.
    ginger beer is interesting.
    and here i am about to go to bed

  10. I don't think I have ever had gingerbread either. I have certainly had ginger snaps/cookies which I enjoy but have not tried the bread. This looks darkly delicious and so pretty with a dusting of "snow." You miss the snow so you put it atop your baking! :-)

    1. It's SO good. And yeah, had to have the snow on top. We only have little bits of snow here and there where it was piled up the highest. Although the sky is blue and the sun is shining, everything is brown, dead and muddy. Yuck.

      We used to know a lttle rhyme as kids:

      "Run, run as fast as you can.
      You can't catch me. I'm a gingerbread man!"

      Funny how one's memory regurgitates stuff with a little prompt.

  17. My mom has made gingerbread my entire life and it is one of those things that SCREAMS home/love/Mary to me...she serves it with home made applesauce and whipped cream! MY MOUTH IS WATERING!
