This is a great way to use up garden tomatoes!
It's fresh, fast and a very light tasting, yummy soup!
Vegetarian!
Ant it freezes well, too.
Fresh Tomato Vegetable Soup
1 c chopped onion
1/4 c butter
2 lbs fresh tomatoes, 1" diced, skin and all.
1 1/2 t salt
1/4 c sugar
1/8 t pepper
1 can green beans, drained
1 can sliced carrots, drained
1 can whole kernel corn, drained
Saute onions in butter until translucent.
Add remaining ingredients and simmer 15 minutes.
Enjoy!

DeleteI think that was the last of mine! There are green ones, but it's not getting hot enough for them. So, fried green tomatoes might be good! I haven't made them in years!

DeleteWhat a wonderful...and easy...recipe. I love that the tomatoes don't have to be peeled. I just made marinara sauce with a bunch of tomatoes from the garden, and the recipe called for peeling and seeding. Work, especially the seeding. However, the end result was perfection.

I guess a vegetable cube could add a bit deeper flavour...and I always add the frozen combo of veggies to my soups...very handy!

DeleteHi Betsy ~ Taking a minutes this morning to check some blogs. Oh that soup does look delicious. We are in the Valley of Fresh Veggies and Fruit, Almonds and Walnuts... DeleteI love veggies! But can't stand veggie soup or for that matter soup in general. Now hubby loves veggie soup so I make it all during the
ReplyDeletefall and winter. I always cook more and then freeze leftovers for him a quick soup and sandwich meal that is EASY.
