Oven Fried Chicken


Do you make it?
Seems like a fall kind of dish to me.
Maybe it's because you turn the oven on!
And even though I'm still picking garden veggies,
there was frost on the ground this morning!


The best part is that you get that fried chicken yumminess without
having to watch a skillet full of hot oil on the stove!
While it's sizzling away in the oven, you can look at the leaves turning!


You can watch kittens play on the back porch
 and butterflies resting in the trees!



And for an hour, you can enjoy the aroma!
Then it's time to eat!

Oven Fried Chicken

Drizzle oil and a little butter in baking pan and set aside.
Dredge pieces of chicken in mixture of flour,
which has been generously seasoned with garlic powder, 
onion powder, salt, pepper, paprika, and thyme.
Lay pieces, skin side down, in the pan and bake
60 minutes at 375, turning over half way through.
I turn on the broiler during the last 10 minutes to get
a really crispy skin.

I also made fried chicken gravy by skimming off the fat and 
adding half-and-half and some chicken broth to the drippings.
Whisk smooth over low heat.  Taste to adjust the seasonings.
Heaven over mashed potatoes.  
Yum.

    1. Yum. I know...reminds me of my childhood! Harry and Spencer wouldn't touch it, but the rest of us, including Alex, enjoyed it a lot!

  2. Oven fried chicken was one of the (few) things I made when I was single. I can smell the aroma looking at your photos! I'm getting really hungry for chicken. Good thing we're going to a chicken restaurant when I get off this train. :)

  11. I learned to make oven fried chicken many years ago and I do not think I ever fry it on the stove top. There are so many different ways to bread it and one is only limited by ones imagination. Most of the time I dip it into flour then an egg mixture and finally into seasoned bread crumbs. Panko bread crumbs are also good but you definitely have to flavor the flour when using them. Also crushed corn flakes make for a good crunchy crust and I have seen where some recipes use instant mashed potatoes instead of bread crumbs. I have never tried that one but I guess you could say you are having your chicken and potatoes in one.

    Your chicken looks so good and it seems like you had a nice relaxing hour to enjoy such nice things around the house. I can almost smell the chicken cooking in your oven and I was going to make Shepherd's Pie but maybe I will make the Oven Fried Chicken instead. Chicken is always a good choice for dinner.
